I put it in a cold oven, set the temperature to 50 degrees and a timer for 1 hour. And then every hour I add 10 degrees. Maximum 80 degrees, no higher. On the thermometer, I see how the temperature inside the ham will be 75 degrees (I did not bring it to 80 - it takes me about 5 hours for everything, but I put on the timer and go about my business, in principle, by the smell it is clear that it is time to check for readiness).
I stick the thermometer inside the ham maker, there are 3 holes on the lid for draining the water, and on the press (red under the lid) there are rectangular holes (I put a circle of paper so that the meat does not come out in them) - so I combine them and the thermometer fits perfectly inside the sausage allowing you to clearly regulate the temperature inside.
When done, I put a large bowl of cold water in the sink and shake out 2-3 trays of ice. I take out the ham, DRAIN the broth and put the ham in a cup in ice water. Our task is to reduce the temperature as quickly as possible so that you can put it in the refrigerator, since a temperature of 30-40 degrees is favorable for the development of bacteria. They cooled it down, as it became cold outside - we remove it, inside it will cool down overnight in the refrigerator.
In the morning, who is the first and the most courageous - takes out a ham maker, unscrews the lid, carefully takes out the ham (with paper, it usually does not stick to the lid and it is necessary to carefully draw a knife along the wall - then it will fall out itself - smooth and beautiful.

Moments: slow heating is needed so that there is no swelling of the meat, so that the sausage, shrinking, does not push all the juice out of itself. So it's best to take your time. Some cook in a saucepan on the stove - this is inconvenient for me, because the whole kitchen is in steam. It's excellent in the oven, the temperature is low, the ham maker up to 100 degrees (and we don't need them) withstands calmly.
I don't add nitrite salt, so I don't keep the meat in the refrigerator for 24 hours, but cook it right away. We eat ham for breakfast during the working week, if there is anything left, it goes into soup or pizza, until it spoils even once. Garlic helps to keep it a little longer, but 1 clove is enough, the smell is very strong.

In a ham maker, they say, you get awesome rolls, fish aspic, etc., but I'm just going to try it all. I love her very dearly, I had an iron one, but it turned out not mine - I sold it.
