yes, there is a stupid instruction! only there is not an instruction, but more a cake recipe than something normal
From our point of view, "stupid", and they reason at the level of pictograms, this is generally such a foreign tendency for those who are illiterate or do not know the language. Once I faced such a problem in a working situation: the French demanded that they produce instructions for working on a lathe in the form of pictograms, otherwise in Africa blacks are illiterate, so that they could understand how to work.

Tell me. I bake French bread for the first time, should the bun be as usual or what? Otherwise, according to this recipe, the dough came out without forming a clear kolobok. I added flour, the bun formed. but now I think it might not be right. You can still fix

I bake everything I bake this French bread and I can't understand - everyone has it so rubbery or just me. It is tasty, it rises well, the roof is even and beautiful, the crust is crispy, BUT it is rubber (his husband calls it that way) And it does not at all look like the French loaf that is sold in the store

Good day, bakers!

I want to share my French bread. Only I added paprika and fried onions there, on the advice of one of the girls, who also bakes bread in a bread machine. And this is what happened:

French bread in a bread maker

I baked according to this recipe:

Dry yeast - 1 tsp.
Wheat flour - 380 gr
Dry paprika (powder) - 2 tbsp. l.
Water - 220 ml
2 medium onions, finely chopped and fried in 1 tbsp. l. vegetable oil
Add overcooked onions after they have cooled

Baking mode "French"
Loaf size - M

P.S. Fry onions until slightly golden brown
Din
And I baked according to the recipe Lera, I just took kefir and reduced the liquid by 30ml (otherwise you always have to add flour), counted it in one and a half norms (we don't have enough small loaves) + fried onion (by the way, I loaded it right away, with all the ingredients). The proportions turned out to be perfect and the bread, respectively!

I also added it at once along with all the ingredients, but I don't think you added it hot?

Of course not, I added it still lukewarm.

My favorite plain bread in [French] mode.

The recipe was borrowed from the instructions for the Panasonic-255 bread maker:

water 300 ml
dry yeast 1 tsp.
wheat flour 400g.
salt 1 tsp
butter 1 tbsp. l. (15g.)
I tried to replace butter with vegetable, but with butter it seems to me tastier.

You have wonderful bread, handsome!

Sonadora, thank you for noticing the inaccuracy in the recipe! I have already made an amendment: this bread, for some reason, requires as much as 300 ml of water, instead of 260 ml per 400 grams of flour in ordinary bread. But tested several times. Lately, I've been putting on a timer in the evening. In the morning I get ready bread!

I have long wanted to bake bread with a lush "rubber" crumb, I don't know how to say it.
Well, it worked!

Baking in Panasonic according to this recipe:
Wheat flour. 1 s - 430 g
Water - 300 ml
Yeast press. - 9 g
Salt - 1.5 tsp
Sugar - 2 tsp
Bran - 2 tsp
The mode is French and no need to drop in!

Just keep in mind, the crust is crispy, and those who have no teeth will not work.
We liked it so much.

Hello!
I was presented with HP Kenwood BM450 on NG and on the morning of January 3 my husband tried my first bread.
baked on the program "French bread"
Here is the recipe from the recipe book attached to the HP:
water 400g
unbleached white flour
for baking bread 540g
French flour of fine grinding 60gr
1 1/2 teaspoon salt
2 teaspoons sugar
dry yeast 1 1/2 teaspoons
Made the only change to the recipe instead of flour for baking bread, I took the most ordinary flour of not the best quality "Makfa" 600g, the bread turned out the first time and the husband and girlfriend really liked it.

MamaSasha, while kneading the kolobok, I advise you to peel off flour and other lumps from the sides of the bucket with a silicone or, in extreme cases, a wooden spatula (help the kolobok) so that the loaf is even (not lumpy) and there is no sagging from flour, as in your photo.

Ludiiiiii !!!! Help! I want French bread, but there is no such program on my clathronics. What to do? There is a small hope that the translation of the instruction is not very high-quality - I have it in German, a kind person dropped it on an Internet in Russian. Who has such HP, maybe you can somehow come up with this bread on it?

KamusikThere is no separate "French bread" mode in many ovens, but just such bread can be baked in the main mode. This is the simplest recipe: there should not be a single gram of sugar in it. All variations with sugar, bran and other additives are a roll, but not French. Choose any mode suitable for your x / p and that's it

Salt-1 tsp
Powdered milk - 1.5 tbsp. l
Butter-1 tbsp. l
Yeast - 1 tsp dry or 7g fresh

Good luck!

Panevg1943

What is the weight of the bread? And which crust to put?
700 g; since there is no sugar (it gives "tan"), then on dark (French will not be too tanned anyway).
If you have a smaller bucket, then you can easily count it for your capacity.

MamaSasha, and my bread according to this recipe also often turns out to be paler in comparison with other recipes, especially in which dairy products are present.

Panevg1943, thanks for the exposed recipe for French bread with milk powder but no sugar. I will definitely try your recipe.

In my instruction in the French bread section, there is a recipe with powdered milk.

Dry. Yeast 1 tsp
Wheat flour 400 grams
Salt 1 1 / 4h. l.
Powdered milk 1 ½ tbsp. l
1 tbsp butter l. (15 grams)

Colleagues bakers!
I really like the Rustic French recipe from the English version of the Panasonic SD-255 instructions. Unlike the Russian counterpart, the recipe contains whole grain flour, which noticeably enriches the taste. The result reminded me very much of the bread popular in Soviet times in the south of Russia and Ukraine. It turns out a tall, awesomely fragrant loaf with a hard, crispy crust and a slightly "stringy" crumb!

Recipe:
Yeast 1.5 tsp (I took pressed "Lux" - 8 g)
Wheat flour - 275 g
Whole wheat flour - 75 g
Rye flour - 50 g
Salt - 1 tsp
Butter - 20 g (original 15 g)
Water - 310 ml.

Mode: French (6 hours).

The difference between the recipe from the instructions and the recipe from Panevg1943 is the amount of salt in the amount of 1/4 tsp. I will also try to bake for the sake of experiment: how an increase in salt will affect the quality of bread.
Although before that I baked from Altai flour, and now I will bake from Sokolnicheskaya, which can also somehow affect the final result.

Hello everyone. Take a new baker into the company ... :) For a week now I can't get enough of my oven. The first bread "basic" came out super, then I tried it with bran and also with a bang, my husband is happy. We want to bake and bake, but we don't have time to eat.
But I wanted to try French and then I broke off, not everything is as simple as I thought.I did it according to the recipe from the book and then on the forum I took the recipe, which was praised and everything works out, but the bread comes out small and the roof cracks. I set the timer for the night and, of course, did not follow the kolobok.
Advise what to do? Put on the day and keep track of it? Is the gingerbread man in French bread the same as in the main or should it be different?

At first, I try to make all new recipes without using a timer.
I remember such a case. I put all the ingredients in the oven in the evening. I put it on a timer. Accidentally woke up at night and decided to look into the kitchen. I see the program is already working. Let me, I think, I'll see how the dough is kneaded there: and there is something similar to pancake dough !!! And then I remember that I measured out less flour than necessary (I wanted to add it later and apparently forgot). I poured flour, but I had to devote most of the night to baking bread.
Good luck!

For the first time I had the same thing as yours - I set it on the timer for 12 hours.
The next time, I came to the conclusion that since for so long all this slurry has been standing motionless in the bucket and waiting in the wings, it means that the quality of flour needs to be improved ... I added a bag of flour improver. And voa-la-the bread turned out to be excellent! Made it strictly according to the recipe from our instructions to Panasonic for French bread + a bag of flour improver.

And what kind of bun should be? The same as in the main bread? I re-read a lot, but I could not find an exact answer. I'm not very familiar with the forum yet.
