Gnocchi

for 2-3 servings

600 gr potatoes
2 yolks
50 g semolina
50 gr flour
salt, nutmeg

Boil the potatoes in their skins in salted water, drain the water. Put the potatoes on a baking sheet and leave to dry in an oven preheated to 180 ° for 5-7 minutes.
Peel the potatoes and pass through a potato press or meat grinder 2 times. (I used a meat grinder).

Gnocchi

Season the potato mass with salt and nutmeg, add yolks, semolina, flour, mix well with a spoon.
Dust the work surface well with flour. Spoon the dough onto the flour and lightly roll in the flour. Divide the dough into 4 pieces.
Roll each piece into a sausage about 35 cm long and cut into 1-1.5 cm wide pieces.
