Ingredients

Softened butter (original margarine) 200 g
Sugar 1.5 cups
Egg 3 pcs
Baking powder (original soda slaked with vinegar) 10 g
Salt pinch
Vanillin on the tip of a knife
Wheat flour 1.5-2 tbsp. flour (glass 200 g) so that the dough is not very thick (in the original 2.5 cups)
Cottage cheese 1 pack

Cooking method

  • Here's a new recipe. Cottage cheese muffins (in the oven) - tender and tasty - my mom often bakes. We all love them, especially my mother-in-law. So I decided to adapt the recipe for microwave.
  • Preparation
  • Cut the butter into cubes and melt in a microwave oven in a container, in which we will then bake the cake.

  • In a mixer bowl (or with a whisk by hand), mix a pack of cottage cheese, sugar, eggs, a pinch of salt, vanilla sugar until smooth (without grains of cottage cheese).

  • Add melted butter, flour mixed with baking powder. Stir until smooth. If the dough is too thick, add Art. l. milk.

  • Pour the dough into a mold with a volume of at least 1.5 liters (the baked goods increase in volume). Run a little with the end of a spoon or a narrow spatula along the bottom so that the dough fills its embossed parts. Level the surface of the dough.
  • We put in the microwave oven for 14 minutes at maximum power (I have 1100 W). We check the readiness with a wooden skewer. If dry, do not bake, although the baked goods may seem soggy. If the skewer is wet, bake for 1 minute. Done!
  • As you can see in the photo, during baking, the dough greatly increases in volume.
  • For 2-3 minutes, the baking cools down, we fold back the edges of the mold (if it is silicone) and we see that the baking does not stick. cover the form with a grate to cool and turn over. The cupcake will easily and without effort come out of the mold.

  • The cupcake is a little "thin", it shakes as if it were raw. Wet places are visible on it. But there are still processes going on inside it: as it cools, the cake will give off excess moisture and "come", its structure will be compacted, but it will remain tender and crumbly like when baking in the oven. Then you can sprinkle it with icing sugar, douse it with fondant or azure and cut. But usually I cut right away: my family is already waiting, since by this time tea and coffee have already arrived. After all, baking in the microwave is so good that you can get an excellent homemade dessert in a hurry.

I just cooked and already tasted
It turned out delicious, but a little dry and difficult to chew - to eat only with tea. Probably due to the fact that the dough turned out to be thick, and there was no milk to dilute it. Next time I'll put in 1.5 cups of flour.
The cottage cheese is not very felt ((The recipe says that you need a pack of cottage cheese - and this is how much? I put about 350 grams.
I also added raisins.
Baked for 16.5 minutes at a power of 850.
