I stole the recipe for a very long time on cooking from some author's theme. Unfortunately, I did not remember the author.

Beef stroganoff in oriental

400 gr of meat (pork, beef, turkey or chicken fillet)
1 leek or 2-3 onions

Marinade

0.5 table. spoons of starch
1 table. spoon of water
2 table. soy sauce
1 tea a spoonful of honey or sugar
1 table. a spoonful of vegetable oil
4-5 (0.5 tablespoons) chives of garlic pressed through a press

Fill

1 table. spoon of water
2 tea. soy sauce
0.5 teaspoon tablespoons of sugar
cayenne red pepper on the tip of a knife

Cut the meat into medallions across the fibers, beat thinly, cut into noodles.
Dip the prepared meat into the marinade, mix well and leave to marinate in the refrigerator for at least 30 minutes, maximum from evening to morning.
2 table. grows spoons. Heat the oil well in a frying pan, throw the meat into the pan and fry over high heat until golden brown. Put the fried meat in a bowl (try to leave the butter in a frying pan).
Separate the green parts of the leek. Chop the white part into rings, fry. Put the meat back in the pan, add the chopped green leeks, pour in the sauce, fry everything together for a couple of minutes and serve immediately with boiled rice.
If possible, it is best to cook with leeks. It turns out tastier.

2. Marinades with starch are common. Why is there starch?
3. If soy sauce is "light", should you increase the amount?

I believe that starch gives the dish tenderness and special richness, and also binds the components of the marinade.
What is this light soy sauce? I only use kickcoman sauce.
