Ingredients

Water 300 ml
Apple cider vinegar 6% 1 tsp
Wheat flour 4.3 cups + 2 tbsp. l.
Salt 2 tsp
Sugar 2.5 Art. l.
Mustard oil 2 tbsp. l.
Dry yeast 2 tsp

Cooking method

  • The recipe is taken from the book for this bread machine, with some changes.
  • 1 cup - 230 ml
  • 1. 1st batch - 7 minutes
  • 2. rest –5 minutes
  • 3.2nd batch - 12 minutes
  • 4.1st ascent - 40 minutes
  • 5.forming - 4 seconds
  • 6.2nd ascent - 26 minutes
  • 7.forming - 4 seconds
  • 8.3rd ascent - 26 minutes
  • 9.baking - 50 minutes
  • 10.cooling - 20 minutes
  • Total baking time 3 hours 30 minutes
  • Replaced sl. butter on mustard and removed milk powder (3 tbsp. l.) from the recipe.
  • 1. Remove the mold and fit the kneader paddle.
  • 2. Add the ingredients in the order indicated in the recipe. (Liquid + loose)
  • 3. Place the dish in the bakery.
  • 4. Select the menu BASIC, MIDDLE SHORT. (The display will show 2 A)
  • 5. Press the START button.

More vinegar is added to wheat-rye breads, since rye flour needs lactic acid bacteria, acid, bread turns out better

If you have kefir, then it is better to make dough on it. And it's not worth combining.
