Sour cream cake

Ingredients

Start cooking 9-12 hours before serving.
50 grams of raisins or prunes (I took prunes)
50 gr walnuts
1 glass of poppy seeds
3 cups flour
2 bags of baking powder (10 g each) (The original recipe had 10 g ... THIS IS LITTLE !!!)
4 eggs
2 cups fat sour cream 20 %(sour cream must be liquid !!!)
3 cups sugar
2 tsp vanilla sugar
4 tbsp. l. cocoa
First cream:
150 gr butter
Condensed coffee from a can to taste (I drunk the whole can)
Second cream:
250 gr sour cream 30-42%
0.5 cups sugar
1 tsp vanilla sugar

Cooking method

  • 1. Pour raisins or prunes with boiling water and leave for 30-40 minutes, then discard in a colander and dry. Finely chop the prunes, finely chop the nuts. Fill the poppy with boiling water for 10 minutes, fold it onto a sieve. Dry and lightly rub in a mortar with 1 tbsp. l. Sahara.
  • 2. Beat eggs with sugar and vanilla sugar until they are white. Add sour cream, beat again. Gradually, in portions, add flour, sifted with baking powder and knead until smooth. Divide the resulting mass into four parts. Add nuts to one, poppy seeds to the other, cocoa to the third, raisins (prunes) to the fourth. ATTENTION!!! THE DOUGH SHOULD NOT BE THICK !!! (If the sour cream was still thick, then add a little milk). Bake each cake in a multi alternately for 35-45 minutes. While one cake is baking, cover the rest of the dough with a foil and put in the refrigerator.

  • Conclusions: This recipe was intended for baking in an oven in a larger diameter mold. The cake baked in a cartoon turns out to be too high ... Therefore, it is better to take either half the dose of the ingredients, or one third. The recipe says that the cake must be ready to stand in the refrigerator for at least eight hours. It is right!!! It must be soaked ... I still sprinkled the cakes before anointing with cognac cream.
  • I draw your attention once again to the fact that the sour cream for the dough should not be thick, otherwise the dough will turn out to be too thick and the cakes will rise poorly (as happened with me with the first two cakes) ... The baking time of the cakes is multi for each one, so I indicated only approximately ... The cake is delicious ... Try it !!!
  • I was too lazy to make the decoration properly ... According to my taste, it would be possible to do with sour cream, just make it more ... Butter cream is loved by my men, I just went with them. Could make white chocolate ganache as a frosting.

For one cake it turns out like this:

0.75 cups flour
0.5 sachet of baking powder (5 g)
1 egg
0.5 cups sour cream (20%)
0.75 cups sugar
0.5 sachet vanilla sugar

50 gr walnuts - 2nd cake
1 glass of poppy seeds - 3rd cake

Now, if you want to take a half dose of the previous quantity, then you first make the dough (green) in double size and divide into four parts ... Then everything is the same ...

For half the dough dose, put in the cakes:

25 gr prunes - 1st cake
25 g walnuts - 2nd cake
0.5 cups poppy seeds - 3rd cake
2 tbsp. l. cocoa - 4th cake

PS It is very difficult to evenly divide the dough into four parts, maybe it is really worth kneading it four times ... While one cake is baking, quickly knead it for the next one? A?

tatulja12, everything will be baked !!! In the book, the recipe is given specifically for the oven ... I quote: Each cake is baked for 20-25 minutes at a temperature of 200 degrees.... And then there is no need to reduce the amount of dough ... Since molds with a larger diameter than the diameter of a multi saucepan are usually used in the oven, which means that the cakes will be lower (thinner). The cake will be just lovely sight !!!

Girls, bake, don't be afraid. Your cakes will be much better than mine turned out ... I only added to the last cake what my mistakes were. Look carefully at the photo ... You see - the two bottom cakes turned out to be very low, they did not rise, because I threw thick sour cream into the dough, then the dough was very thick ... I already poured milk into the poppy cake, t That is, the dough became thinner, and, as a result, the cake rose better ... And only in the fourth, besides the milk, I poured another baking powder, it turned out to be fluffy ... And all four of your cakes will be so tall and fluffy. .. Once again I will emphasize what you should pay attention to:

1. Buy two types of sour cream ... Liquid for dough and thick for cream.

2. The dough should not be thick, the consistency should be medium thick sour cream. If the dough still turns out to be thick, then dilute with milk.

3. Pour in baking powder, as I wrote - two sachets for 3 cups of flour.

4. If the sour cream does not whip well, you can add a thickener for cream or milk powder while whipping.

5. Make sure to let the finished cake soak well, do not eat it right away !!!

Thanks for the recipe. Everything worked out. Baked in the oven, kneaded the dough 4 times. The cakes turned out to be 2.5 cm, I thought that they would not be soaked and I decided to cut them. It is necessary to do exactly half of the norm.
