Angela, I, of course, have nothing close to your recipe, but your idea, so we had eggplant stuffed with potatoes, with onions and peppers for lunch. It was impossible to cook such, I cooked in a pan under the lid. She took the eggplants in kegs. It turned out delicious. I will definitely cook it with rice.
