Note

From Wikipedia:

Tahini, tahina or tahina (also known as sesame paste or sesame paste) is a thick paste made from ground sesame seeds common in the Middle East, it is added as a necessary ingredient to many dishes, for example, to falafel, to hummus, in addition, it serves as a base for many sauces. Tahini contains milled sesame seeds (100%). When using, the paste is diluted with water to the consistency of liquid sour cream, lemon juice, salt and garlic are added, and in different regions, various syrups or other additives are also added to the base. The classic hummus snack is made on the basis of chickpeas and tahini.

Tahini is well known in the cuisine of the Arab countries of the Middle East and Israel (where it is called "tkhina" in accordance with what the Arabs call it, Arabic طحينية; Hebrew טחינה), as well as Greece, Cyprus - Cypriot pies with tahini "tahina pita" are especially popular during Lent. Olive oil, lemon juice, garlic, ground cumin, red pepper, parsley are often added to tahini and used as a gravy or simply served with pita or bread. Takhinny mass is used to make many oriental sweets, including one of the most famous - halva. In Japanese cuisine, roasted sesame tahini is mainly used as the main ingredient in the popular gomadare sauce. [3]

History
The oldest mention of tahini can be found in cuneiform instructions written about 4,000 years ago, which describe the custom of serving sesame wine to the gods. The ancient Greek historian Herodotus mentions the cultivation of sesame seeds in the region of the Tigris and Euphrates rivers. These seeds were mainly used as an ingredient for making sesame oil.

Tahini as an ingredient is mentioned in the preparation of hummus in the recipe of the 13th century cookbooks, it is an ingredient in some Chinese, Korean and Japanese dishes; Tahini is used in some versions of the Sichuan noodle recipe. Sesame paste is also used in Indian cuisine. In the United States, sesame tahini, along with other nut oils, was marketed in 1940 at health food stores.

Cook, why the name of the recipe with exclamation marks at the end? Have you changed the Russian language rules again? Did I miss something?

Cook, Igor, thanks for the recipe, it must be delicious! And an interesting idea to use this sauce as a substitute for mayonnaise will have to try.
But a self-respecting baker will not buy sesame paste in a store, but will make it himself!
For example, like this:

And it is really better to remove exclamation marks from the name of the recipe, it looks undignified, and in general it is not welcome.
