Chocolate cake with blueberry mousse

Ingredients

for biscuit
rice flour 0.5 tbsp.
sugar 110 g
eggs 3 pcs
cocoa powder 2 tbsp. l.
vanillin pinch
baking powder 0.5 tsp
for mousse
frozen blueberries 200 g
sugar 5 tbsp. l.
sheet gelatin 15 g
fat cream 300 ml
to cover the mold
chocolate 180 g

Cooking method

Biscuit preparation. Beat eggs well with sugar. The mass should turn white and increase in size.
Sift flour, cocoa, baking powder and vanillin into beaten eggs. Stir gently with a spatula from bottom to top. The dough should be fluffy.
Pour the dough onto a baking sheet or into a mold lined with baking paper. Smooth out and bake in an oven preheated to 170 degrees for 15-20 minutes. Do not dry out. Willingness to check by pressing a finger, if it is springy, ready.
Cool the baked cake and cut into 3 small cakes according to the size of the mold.
Chop blueberries. Pour blueberry puree into a small ladle and add sugar. We heat over a fire, bringing to a boil and sugar dissolving. Do not boil.
In the slightly cooled blueberry puree, add sheet gelatin, previously soaked in cold water and well squeezed. Stir.
Whisk the cream well and add to the puree. First add a couple of spoons and stir, then the remaining cream. Mix the mixture well and leave for a while to thicken.
Melt the chocolate in a water bath. Coat the silicone mold with chocolate from the inside with a thick layer. Place the mold in the freezer for 5-10 minutes. Then you can apply another layer of chocolate so that there are no empty spots. Put the mold in the freezer again for 10-15 minutes.
We take the chocolate mold out of the freezer and coat the inside with blueberry mousse. We put one cake on the bottom, put some of the mousse on it. Cover with the second cake, mousse on it. We finish with the third cake, press it down and put the cake mold in the refrigerator overnight.
The next day, carefully remove from the mold, cut and serve with tea or coffee.
