Sprouted Wheat Bread

Ingredients

* Wheat (dry) 1 tbsp. (250 ml.)
* Starter potato-hop 50 ml.
* Wheat flour 1 tbsp. for dough + 1 tbsp. in batch (glass 250 ml.)
* Water 200 ml.
* Sugar 2-3 tsp
* Salt 1.5 tsp.

Cooking method

  • A glass of wheat to germinate (sprouts 1-2 mm)
  • Pass in a meat grinder twice, through a fine wire rack.
  • Add 200 ml. water, a glass of wheat flour, knead the dough.
  • Separate 1/3 part, add starter, stir.
  • Cover the container and leave overnight.
  • Cover the rest of the dough (2/3) and leave to ferment overnight.
  • In the morning add sugar and salt to the dough. Mix. Combine with fermented dough (it will rise even without a starter). Stir until smooth.
  • Pour in flour (1 tbsp.) And knead thoroughly. The dough does not hold its shape.
  • We put it in a dish for lifting (increase 2 times, as expected)
  • Now we put it on a dusty, flour, table and shape the bread. I like to stretch into a rectangle and roll into a roll, along the length of the form.
  • Grease this form, place a grain blank in it. Next comes the proofing, warm.
  • Bread is baked at T = 220 * C for 20 minutes, then reduce the heat to 180 * and bake for another 40 minutes.
  • If the bread quickly picks up color, then cover the top with foil.
  • Bread is cooled on a wire rack under a towel.

I do not advise cutting grain bread before it ripens. The fact is that until the crumb has stabilized, it is wet. My bread always sleeps in the refrigerator. And in the morning - voila - wonderful cereal bread.

I also practice this option, a little more noble. BUT there is eternal rye leaven (although no one will interfere with baking on our hop)
