Cooking method

  • Dough:
  • Grind yeast, pour in warm water, add flour. Mix. Tighten the container with the dough with plastic foil.
  • Fermentation at room temperature for 3 hours.
  • Dough:
  • Pour warm milk into the dough. Add yeast, flour, apple jam, cottage cheese, rubbed through a sieve. Knead for 10 minutes. Add softened butter in small pieces, add salt. Knead a soft, non-sticky dough.
  • Fermentation at room temperature for 90 minutes. In the middle of fermentation, stretch and fold the dough.
  • Knead the finished dough, divide into pieces. Roll each piece of dough thinly, roll into a roll. Let the rolls rest for 10 minutes, then roll on the table, extending.
  • Form a braid. Cover loosely with plastic wrap. Proofing at room temperature for 60 minutes.
  • Before sending to the oven, grease the wicker with an egg, sprinkle with sesame seeds.
  • Bake in an oven preheated to 220C (convection 200C) degrees, with steam for the first 7-8 minutes. Then lower the temperature to 180C (convection 160C) degrees and bring the bread to readiness.
