Zucchini / zucchini stew with dill (spiralizer)


Zucchini (zucchini) 700 gram
Turnip onion 100g
Dill - bunch 25-35 grams
Vegetable oil (for frying) 2 tbsp. spoons
Salt 1-1.5 tbsp. spoons
Lemon acid 1/2 tsp
Turmeric (optional) 2 tbsp. spoons
Bulgarian pepper * (optional) 100g

Cooking method

  • The set of products is minimal: zucchini / zucchini, turnip onions, dill ...
  • So…
  • 1. Prepare the courgettes / zucchini (this time there was a pair of zucchini, each 27 cm long) by cutting them on a spiralizer on a 3 mm blade.
  • 2. Chop the onion as for frying.
  • Put a saucepan with a thick bottom on the stove to warm up with vegetable oil.
  • Add chopped onion (for overcooking - sautéing).
  • 3. While the onion is being prepared, which must be stirred periodically, chop a bunch of dill (and optionally, Bulgarian pepper).
  • Stir the onion and put the dill (+ chopped pepper) on top, close the lid.
  • 4. After 5 minutes, mix the onion with dill (+ pepper (if added)), then put half of the steamed zucchini (so that half of the roasting pan is occupied) and mix with the resulting frying of onion and dill, and then put the remaining steamed zucchini, add about 4-5 tbsp. tablespoons of water (no more, so that the onion does not begin to "burn") and close the lid, leaving to stew for 7-10 minutes.
  • 5. Then mix everything, salt, add citric acid, turmeric (preferably in such a sequence that salt and citric acid dissolve under the influence of steam), mix everything, cover with a lid, and after 1-2 minutes “zucchini / zucchini stew with dill ”will be ready.
  • Recommended to eat with a fork and spoon (like regular spaghetti (so it can also be used as a side dish or as a "main course")).
  • "Fried" from sautéed onions with a 5-minute "stewing" with added dill gives its aroma and taste to the zucchini.
  • * As for the bell pepper, I do not always use it (if available, but here my mother had such a "black prince", so I wanted to arrange a "photo session" for him).
  • Also, by the way, you can add, for example, "Tasty Salt" ...

And more ... I presented my colleague (former) for one of the holidays with a spiralizer (for trial), but since it presented difficulties in understanding what can be cooked deliciously from zucchini, somehow, having made this "stew", I postponed and for her (and had to meet), so that she had an idea of ​​how you can make the zucchini delicious ... while hearing from her that she "does not mind the insipid taste of food." It was nice to hear later when she called me that it was unexpected for her, that the zucchini, it turns out, might not be tasteless.

In this regard, I invited her to visit me for this simple dish of zucchini (adding, however, and zucchini "in Indian"),
and she liked it so much, but I must say that this "stew with dill" is more.
