Baked mackerel stuffed with cheese and eggs (option 2)

Ingredients

Fresh frozen mackerel 2 pcs. (500 gr.)
Chicken egg 2 pcs.
hard cheese (semi-hard) 50 gr.
dry mustard 1/2 tsp
lemon (juice and zest) 1/2 pcs.
chopped parsley 2-3 st. l.
salt pepper taste

Cooking method

  • The fish needs to be cleaned and rinsed, cut off the head, then dry the fish with a paper towel.
  • Boil eggs until tender, grate.
  • Grate the cheese. Finely chop the parsley (I have frozen parsley). Remove the zest from the lemon with fine shavings.
  • Mix eggs, cheese, lemon juice and zest, herbs and mustard. Add salt and pepper to taste.
  • Make 3 deep cuts on the fish on each side of the carcass, salt and pepper.
  • Put the egg-cheese filling inside the fish.
  • Wrap each fish in foil. Place on a baking sheet.
  • Bake in an oven preheated to 180C for about 25 minutes, then open the foil and bake for another 10 minutes until golden brown.
