Chickpeas with zucchini and bell pepper

Ingredients

chickpea 200 g
zucchini 2 pcs.
bread crumbs (optional) 1-2 tbsp. l.
bell pepper 1-2 pcs.
vegetable or olive oil 2-4 st. l.
salt taste
spices taste

Cooking method

  • Soak the chickpeas for 12 hours. Next, rinse under running water, pour a small amount of water, bring to a boil, drain the water, refill the chickpeas with sufficient water and boil until tender.
  • Rinse the zucchini under running water and cut into cubes, peel and cut the pepper into strips.
  • Preheat a skillet with 2 tbsp. l. vegetable or olive oil, add zucchini cubes and fry over medium heat until golden brown. Add chopped peppers, stir, add chickpeas and breadcrumbs, add remaining oil if necessary, season with spices and salt. Cook for a few more minutes and serve, garnished with fresh herbs to taste.

Recently, I have been adding flaxseed cake everywhere (not bran). And in warm vegetable dishes and cold vegetable salads. Perfectly adds satiety, goes well with any sauces and vegetables (it seems to me). Soaking it makes the dish look thicker.
In short ... I will cook chickpeas with zucchini and bell peppers! Well, and with flaxseed cake instead of bread crumbs!
