Ingredients

Basil green 300 grams
Peeled garlic 300 grams
Chili pepper red, green (15 cm.) 5 pieces.

Cooking method

  • Peel the basil, tear off the rough branches, leave only young fragile branches and leaves. Rinse basil in water, squeeze out of water. I do this in a green washing carousel.
  • Peel the garlic, rinse in water and dry with a towel.
  • Cut the chili peppers in half, peel off seeds, petioles, rinse in water and dry on a towel.
  • Now you need to finely chop the garlic and chili. For this I used a meat grinder attachment, which perfectly ground garlic and pepper, coarsely.
  • Now cut the basil into thin strips and place in a large bowl. This should be done faster so that the leaves do not darken.
  • Add salt, pepper, garlic to the basil, mix gently the mixture so that the salt is distributed over the vegetable slices.
  • Spread the vegetable slices with salt on the trays of the dryer, and put to dry at the maximum temperature until the mass dries, the salt dries. It is still advisable to turn the mass during drying so that it does not get caught by a stone.
  • Then I transferred the finished mass after the dryer onto a paper bag, and let it stand in the air for an additional period.

  • Store the prepared salt in a sealed container to preserve all the aromas of basil and garlic.
  • For the first, second and wet dishes, I use the prepared salt pieces, as in the sample.

  • For salads, grind the salt in a blender until finely ground, so it dissolves faster in vegetable salads.
