Ingredients

grape liquid yeast 130 BC
wheat flour 1 grade 400 BC
whole grain wheat flour 100 g
water 180 BC
salt 10 g
buttercream 20 g
FOR SEALING:
1.5 liters of water
1.5 tbsp. l. soda

Cooking method

  • These buns have increased aroma and ruddy due to the fact that they are scalded in a soda solution before baking.

  • Knead a tough bun of 200 g flour with your hands 130 g liquid natural yeast (recipe here )

  • Cover the dough and leave to rise at room temperature for 10-12 hours. (convenient for the night).

  • In the morning, the dough will increase more than 2 times. We will knead
  • DOUGH.
  • Add 180 g of water, flour of 1 grade 200 g and whole grain 100 g.
  • Let it sit for 20-60 minutes.
  • It turns out a steep dough, so we knead it together with the kneader (I help him with a spatula). The whole process takes 15 minutes. At 8 minutes add 10 g of salt. and then a piece of butter (but not entirely, but with shavings, straight from the refrigerator), 20 g. With butter, the dough is noticeably softer. (And with a vegetable identity it is good. Especially with mustard).

  • Now the dough needs to be rounded and allowed to ferment until it doubles (it takes me 4 hours.) After the first hour and after another hour - kneading - folding with an envelope to strengthen the "muscles" of the dough.

  • Gently stretch the matched fluffy dough without crushing it into a long rectangle and divide it into 12 equal parts with a scraper.

  • Form round buns out of them, first folding the edges into the center, and then, turning them over with the seam down, roll them up, as if pulling the surface. The surface of the bun should be uniform, without tears or creases.

  • Place the buns seam down on a flour-dusted towel at a sufficient distance from another and leave in a warm place to approach. (and cover, of course)

  • After about an hour, boil 1.5 liters of water and add 1.5 tbsp. l. soda. Reduce heat to low and bathe buns in solution on each side for 10 seconds.

  • Spread out with a slotted spoon on a dry, well-absorbent towel so that excess starchy water does not then bake into a puddle around the roll.
  • And immediately transfer (seam down; hands) onto a baking sheet with a non-stick mat.
  • I scald and bake in 2 passes of 6 pieces.

  • OVEN in an oven heated to 230 degrees for about 17 minutes.

Note

If the dough is too steep, add a little water. (Everybody has flour of different moisture capacity).
