Ingredients

cottage cheese the fatter the better 600 gr.
mascarpone 125 gr.
butter 100 g
powdered sugar 150 gr.
cream (30-33%) 100 ml.
bitter chocolate, I have 75% 100 g

Cooking method

  • Rub the cottage cheese through a sieve, add powdered sugar and butter, which we must get in advance, so that it becomes very soft. Beat everything with a mixer.
  • Put the cream in a water bath, break 75 gr. chocolate, heat, stirring, until the chocolate is completely dissolved, the mass is quite thick. You can melt the cream and chocolate in the microwave. Set aside the chocolate mass to cool.
  • Put the mascarpone in the curd mass and beat again with a mixer.
  • Chop the remaining chocolate, as it is more convenient for anyone, if you like smaller, then on a grater, if you like larger, then with a knife, but too coarse is not desirable, otherwise the coarse pieces of chocolate will fall when you eat tender Easter. I scraped the chocolate with a knife.
  • Add the chocolate-creamy mass and chocolate chips to the curd, mix everything well so that there are no white spots left.
  • Line the mold with damp gauze with overlaps, put the mass there, gently wrap the ends of the gauze, cover with a plate or other suitable object and put under a press. First, 4-6 hours at room temperature, then put the entire structure in the refrigerator. My Easter was a little thin at the beginning, I put it in a pasochny with a decent slide, by Saturday the slide was all gone and the pasochka became very dense.
  • My pasochka insisted for two days from Thursday morning to Saturday, since we bless Easter, Easter cake and eggs on Saturday, if you bless on Sunday, it’s better to leave it until Sunday. If it is not important for you when to do Easter, then in order to unload "Clean Thursday" you can make it on Wednesday, the longer it is infused, the tastier it becomes.
  • Before carrying Easter to consecrate, remove the load, unfold the gauze, cover the form with a plate and carefully turn it over, remove the form, fabric and decorate.
