Wheat-rye bread with raisins in a bread maker

Ingredients

Rye flour (cup = 240ml) 1.5 pcs.
Wheat flour (cup = 240ml) 1.5 pcs.
Water 280-300 ml
Salt 1 tsp
Granulated sugar 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Dry yeast 1.5 tsp.
Malt (dry) 2 tbsp. l.
Extra-r 1/2 tbsp. l.
Panifarin 3 tsp
Raisins 60 g
Coriander 1 tbsp. l.
and 1 tbsp. l. for sprinkling.

Cooking method

  • Load the ingredients into the bucket of the bread maker in the order according to the instructions.
  • When the timer has 1 hour 20 minutes before the end of baking, pull out the kneading knife, grease your hands with butter and form an even brick (very carefully, do not knead in any case). When the timer is 1 hour before the end of baking, grease the top of the bread with 1 yolk and sprinkle with coriander, slightly (!!!) press the grains into the dough.
  • Watch out for the bun during the kneading process!
  • It always works !!! Add some nuts or seeds if you like!

The bread is fragrant, with a pronounced sourness (typical for rye bread) and, of course, with a crispy crust and delicious crumb.
But the same bread with walnuts, dried apricots, raisins and prunes (I did not add karyanr). An overload of breads are sprinkled with chopped. walnuts and a little raisins (by the way, it didn't burn at all).

The first time I saw flour in pieces was in a recipe. Some kind of horror, I almost ditched the bread - but I always follow the bun, I managed to add another 140 grams of flour.
People, there are THREE cans of 240 ml of total flour. TS, buy yourself a scale. Your "240ml" is very density dependent.
TS, be misleading - if there are raisins in the recipe, it is NATURAL to pour it into the dispenser of the bread machine. And in the "Basic Baking" mode, the raisin dispenser will NOT open and you will get a little different from what you expected. I have to warn you - I just didn't realize that I would get bread without raisins.
The recipe is good, but "doesn't work" without thinking it through.

In total, we have approximately:
wheat flour 1.5 cups x 150 grams = 225-230 grams
rye flour 1.5 measuring cups, 130 grams each = 195-200 grams
Total 420 - 430 grams of flour ABOUT!

This amount of flour requires about 280-300 ml. water + 1 tbsp. l. vegetable oil prescription.

But the moisture content of your flour, and the presence of rye flour and raisins will require some additional water, literally 1-2 tbsp. l.

We all have different bread makers, so you don't need to follow the author's recipe to the end, but taking into account the specifics of the work of your model, which it would also be good to know yourself.

You don't need to think about anything in this recipe! Take a measuring glass and go, in this recipe, neither density nor anything else plays any role at all.Don't exaggerate! I bake this bread CONSTANTLY, and everyone who tries it takes the recipe and cooks according to it! Nobody ever had any problems! Moreover, many who read this recipe probably do not have measuring scales (like I did at that time), and I only managed with a measuring cup that came with a bread maker ... and nothing, the bread was baked amazing !!!!! You don't need to follow the kolobok, just add everything and forget! I guarantee excellent bread, with a delicious crust and a smooth top!
Sorin, I don't know what kind of stove you have there, but in my Panasonik, the dispenser in the main mode OPENS by itself and I don't have any problems with adding any "additives" at all! Also, in my instructions for my stove, everything is measured precisely with measuring cups and spoons! So your review seems EXTREMELY strange to me! I am not a professional baker, and there are a lot of us sitting here! And the recipe is simple!
