Ingredients

Dough:
dry yeast 3 g
wheat flour c. from. 250 g
milk 150 g
salt 4 g
sugar 25 g
butter 25 g
Finishing:
egg 1 PC
breadcrumbs 2-3 st. l

Cooking method

  • Breaded bunsMix yeast with flour (leave one tablespoon of flour), add salt, sugar, pour in warm milk. Knead for 8-9 minutes.
  • Add softened butter and remaining flour. Knead a soft, non-sticky dough.
  • Breaded bunsLeave the dough to ferment at room temperature for an hour and a half. In the middle of fermentation, knead the dough once.
  • Breaded bunsDivide the dough into six pieces. Form round dough pieces. Bathe each piece in a scrambled egg.
  • Breaded bunsRoll in bread crumbs on all sides.
  • Breaded bunsPlace on a baking sheet lined with baking paper. Cover loosely with plastic wrap. Proofing for 50-60 minutes at a temperature of 27-28C degrees.
  • Breaded bunsBake in an oven preheated to 220C degrees, with steam for the first 7-8 minutes. Then reduce the temperature to 180C degrees and bring the rolls to readiness.

These are such wonderful buns.Double portion, half is gone. I would never have thought that with a minimum of fiddling with the dough, such an airy crumb could turn out. They are magical, the crust is thin, but such .., well, in general, such!), I think because of the crackers. My electric oven is simple, there are no stones, but there is convection and I put a cast-iron pan under the bottom (pouring boiling water) for 10 minutes. And yet, as for me, they are not at all sweet, at all, next time I will try to put more sugar, a little bit.
