Cranberry roll

Ingredients

Dough
wheat flour / grade 250 g
sugar 25 g
pressed yeast 15 g

butter 30 g
milk 95 ml.
salt 1/2 tsp
vanilla taste

cranberry 130 BC
sugar 80 g
lemon juice 1 tbsp. l.
starch (I have potato) 2/3 tsp
cinnamon pinch

Cooking method

  • Cranberry rollI kneaded the dough in HP (7 * 5 * 12).
  • Melt the butter and cool.
  • Dissolve the yeast in milk.
  • Load all ingredients except salt and oil into the HP bucket.
  • As soon as the dough starts to form into a bun, gradually add oil and salt. The dough does not stick either to the walls or to the bottom.
  • Cranberry rollPour the dough onto the oiled table and form into a ball. Put in a bowl, cover and ferment at room temperature. Fermentation until it increases in volume by two, two and a half times. This will take 60 to 90 minutes.

  • Cranberry rollWhile the dough ferments, prepare the filling.
  • In a saucepan, combine cranberries, sugar and lemon juice. Let stand for 10 minutes. Put on fire. With constant stirring, bring the mixture to a boil. Boil for 5 minutes. Add starch and cook until thick. Remove from heat, add cinnamon, stir. Allow to cool.
  • Cranberry rollRoll out the dough into a rectangle 4-5 millimeters thick. Grease with filling.
  • Cranberry rollSpread the pieces of butter on top.
  • Cranberry rollCut the layer into squares.
  • Cranberry rollFrom the squares, fold the loaf straight into a mold, lined on all sides with baking paper. The end pieces must be placed with the filling inside.
  • Cranberry rollCover the form and let the loaf stand until it doubles in volume.
  • Cranberry rollPut to bake in an oven preheated to 180 degrees for 20 minutes. Cover the top with foil, reduce the temperature to 165 degrees and bake for another 20-25 minutes.
  • Remove from oven, remove from mold and allow to cool.
  • If desired, the bun can be coated with icing of powdered sugar and milk or sprinkled with powder.
