Eggplant with cabbage

Ingredients

Eggplant 3 Kg
Cabbage 2 Kg
Bell pepper 2 Kg
Carrot 0.5KG
Garlic 0.5KG
Vinegar 100 ml
Vegetable oil 1 st
Dill, parsley taste

Cooking method

  • Cut the eggplants into washers and pour cold, salted water for 3 hours.
  • Finely chop the cabbage.
  • Peel the bell peppers and cut into strips.
  • Grate carrots on a coarse grater.
  • Peel the garlic, rinse it from the slimy film, chop it in a way convenient for you.
  • Rinse greens, dry and cut.
  • Mix all vegetables except eggplant.
  • Stir very gently so that a lot of juice does not form
  • Add vinegar and salt to taste.
  • Drain the eggplant, squeeze lightly and fry them in vegetable oil.
  • Fill 0.5 liter jars in layers - a layer of fried eggplant, a layer of vegetable mixture.
  • Cover tightly filled jars with lids and sterilize for 40 minutes.
  • Roll up and turn over until it cools.

The recipe is very old, copied from my mother's notebook. Mom often covered such eggplants with cabbage. But I’m obviously lazy, I never got around to this recipe. I rewrote and forgot. Every year there are some new recipes that you always want to try. Among these recipes, many salad recipes have dropped out over time, some have fallen in love. And they are repeated from year to year.
I remembered this recipe only because in our Gazebo we talked about such a salad and the girls asked to write it.
Of course, I don't have a photo of this salad, since I myself have never made it. Yes, and I think that the photo does not carry any special information, ordinary cans that are stuffed with our cellars or cellars at the end of autumn. Well, it's up to you to decide whether or not to make such a salad.
By the number of ingredients, I remember that it always turned out a lot of this salad. The jars, the washing of which always lay on me, washed about 12-15 pieces. So you can safely cut the proportions in half.
