  • First, prepare the hot filling sauce. Cut the tomatoes and bell peppers into pieces and chop them together with the chives with a blender or meat grinder. The chopped mass-sauce resembles "raw adjika", the quantity and proportions of tomatoes and peppers can be different. Season the sauce with salt, red and black pepper to taste. We mix. I add a few drops of vegetable oil to the sauce, with it the taste and aroma becomes brighter and more intense.

  • While the sauce is infusing, prepare the herbs for sprinkling, you can simply chop it finely with a knife.

I fried in a GF pizza maker: preheated, under a closed lid, at the maximum temperature for 5-7 minutes on each side. Having behind me many years of experience in frying eggplants in a pan, I can say with confidence that in a pizza maker the process is greatly simplified!

Lay out on the dish in layers: after laying the first layer on each circle, put a spoonful of the filling, then sprinkle with herbs on top of the layer, lay the next layer of circles on top, trying to lay over the intervals of the lower layer, not "turrets". It is not necessary to make a too high pyramid of eggplant layers, three or four circles are quite enough, otherwise a lot of juice will stand out.
