Eastern roll

Ingredients

Dark layer:
Beef (minced weight) 500 g
Nitrite salt 4 g
Table salt 4-5 gr
Ground black pepper 1 g
Ground garlic 1 g

Cooking method

  • Eastern rollPass the beef (lean) through a meat grinder with a 5 mm wire rack. Add both types of salt, garlic and black pepper to the minced meat. Knead the minced meat, adding water, until the minced meat completely absorbs moisture and the formation of white protein threads. I knead with a mixer with dough hooks for 8-10 minutes. Put the minced meat in the refrigerator.
  • Eastern rollChicken breast (slightly frozen), together with the skin, also turn in a meat grinder with a 5 mm wire rack. Add salt, red pepper and garlic to the minced meat, mix with water, for 5-7 minutes, until protein threads are formed.
  • Eastern rollCut off the required piece of collagen film. Spread it out on a clean, dry table. Lightly dampen the film with a damp hand. Sprinkle 2/3 of the film with textured spices (optional).
  • Eastern rollGently spread the ground beef over the spices, carefully compacting it with a layer 0.5 cm thick.
  • Eastern rollTop the ground beef with Golden Blend (optional).
  • Eastern rollSpread the minced chicken over the beef, stepping back a little from the edge of the dark mince. Then a spiral is formed on the cut.
  • Eastern rollTwist a tight roll, starting from the edge closest to you.
  • Eastern rollUsing a bottle without a bottom, a piece of pipe, pull the forming mesh onto the roll.
  • Eastern rollTie the ends with a thread. Leave the roll for salting in the refrigerator for at least 6 hours.
  • Eastern rollSuch a roll, as in the previous photo, 25-30 cm long will be baked in the oven. For cooking in a saucepan or baking in an airfryer, for example, the length of the roll will be 18-20 cm.
  • Eastern rollAfter salting, the roll must be heated to room temperature for an hour and cooked in any convenient way (boiling in water, baking in the oven) at 80aboutC until the temperature inside the roll reaches 72aboutFROM.
  • Eastern rollI baked small rolls in an airfryer, with mandatory temperature control in the flask and inside the rolls, according to the following scheme:
  • 1st hour - 60 ° С speed 3 (high)
  • 2nd hour - 70 ° speed 3 (high)
  • 3rd hour - 80 ° С speed 3 (high)
  • 4th hour - 80 ° С speed 2 (average) up to 72 ° inside the rolls.
  • When ready, cool the roll to room temperature using ice water or ice and leave to ripen in the refrigerator for 6-8 hours.
