Ingredients

Chicken (not very old soup is better) 1 PC.
Onion 1 PC.
Medium carrots 1 PC.
Herbs and roots for broth taste
Miso pasta for 1.2 l of broth 2 tbsp. l.
Soy sauce 100 ml
Quail eggs (chicken) 9 pcs. (6 pcs.)
Fresh spinach (frozen) bundle (3-4 turns)
Fresh oyster mushrooms 200 g
White wine 50 ml
Sugar 0.5 tsp
Broth salt season to taste
Vegetable oil for frying mushrooms and spinach 2 tbsp. l.
Ramen noodles 400 g

Cooking method

  • Ramen with chicken, poached spinach, pickled quail eggs, oyster mushrooms and green onions
  • 1. Pour three liters of cold water over the chicken, bring to a boil, remove the foam, salt, add the carrots, cut in half and the peeled onion. Cook over low heat for 3 hours.
  • 2. Remove the chicken and remove the meat from the bones. Strain the finished broth.
  • 3. Boil eggs in salted water for 7-8 minutes, then cool them under running cold water for 3 minutes. Peel the eggs gently.
  • 4. Marinate eggs. Pour soy sauce, white wine and sugar into a small zip-lock bag with a fastener. Put eggs in this mixture, remove air from the bag, close and leave for 3-4 hours. You want the mixture to completely cover the eggs.

  • 5. Cook the noodles separately in a large amount of boiling salted water according to the instructions on the package, without boiling for one minute so that it does not scatter. Place the noodles in a colander and place in deep bowls.
  • 6. Defrost the spinach and pat dry with a paper towel. Just wash fresh spinach thoroughly.
  • Pour one to two teaspoons of vegetable oil into a skillet and quickly simmer the spinach leaves. Just do not overdry or fry.
