Ingredients

Beef (tenderloin ideally) 400-500g.
Onions (shallots, leeks are also suitable) 1-2 pcs.
Flour (for sauce and breading) 3-5 tbsp. l.
Spices (salt, pepper) taste
Mushroom powder or any mushrooms (from champignons to porcini)
Cream 10-25% from 200 g.
Broth or water 300-400 g.
Sour cream 100 g
Butter for frying meat and butter for sautéing onions
Any pancakes (thin or fluffy, large or like pancakes) how much can you eat at a time

Cooking method

  • Cut the beef into thin slices (0.5 cm max).
  • Season with salt and pepper. I also added utskho suneli.

  • Roll the slices in flour and fry quickly in your favorite oil over medium-high heat until light brown. The main thing is not to overload the pan so that the meat is fried and not let the juice out.

  • Put the pan on low heat and remove the oil with a paper towel. Melt the butter in it and gently sauté the onion until soft, not allowing to fry, at the end add Art. l. flour (you can use the flour in which you breaded).

  • Stirring constantly, let the flour brew until golden brown.

  • Dilute the onion dressing with water or broth (a small amount) and pour over the meat. Add cream, and broth (in the absence of water), mushroom powder (it's just ground dry mushrooms). Mix everything and put to simmer, not allowing to boil. You can sweat for a short time, 15-20 minutes, so that all the tastes are mixed, because all the ingredients are ready. Or you can leave it on very low heat for a couple of hours, so that it is "heated". Add sour cream 5-10 minutes before serving, and again, do not boil, but only warm everything together. I tormented in Shteba at 82 degrees (default).

  • Instead of mushroom powder, you can put fried champignons or wild mushrooms. And if you have dry mushrooms, then it is easier to grind them into powder than soak and then fry, provided that they were dried clean, without soil.

Traditionally, Belarusian machanka is cooked with pork, but I love this Stroganoff version the most. Almost any leftover meat can be added to this sauce. There are only a couple of cutlets, a piece of baked meat, a piece of sausages "neither two nor one and a half" - all in a machanka! The sauce will unite everything, and it will be delicious!
We got some sourdough pancakes today, mmmmmmm!

DonnaRosa, this very meaty sauce for pancakes is made on the basis of beef stroganoff, in fact, it is the main dish, there is just a lot of the sauce itself (its liquid part), and it is intended for dipping any unsweetened pancakes, hence the name - machanka.This option goes well with mashed potatoes, rice or pasta.

This does not exclude the preparation of this sauce, there are pieces of meat in it, it will not attach to the pancake, IMHO, if you dip in.
