Ingredients

butter 200 g
tomato paste 6 tbsp
flour 600 g
baking powder 10 g
salt 1/2 tsp
CREAM
sour cream 25-35% 800 g

cream 10% 400 g
sugar 3 tbsp

starch or flour 2 tbsp

GLAZE
cocoa 4 tbsp
sour cream 25-35% 4 tbsp
sugar 3 tbsp
oil 75 g

Cooking method

  • Melt butter.
  • Beat eggs with sugar. Mix with oil, add tomato paste. Beat again.
  • Add the sifted flour and baking powder. Knead a soft dough. Wrap in plastic and refrigerate for 30 minutes.
  • In the original recipe, it was proposed to divide into 5-6 parts, but I liked thin layers better, so we divide into 12 parts.
  • Roll out on parchment into a thin cake (I got 22 cm). Bake at 2000... The cakes are baked very quickly - 3-4 minutes. It turns out one conveyor, one roll out, one oven.
  • CREAM:
  • brew base
  • Beat eggs and sugar (3 tablespoons) until smooth, light yellow.
  • Add cream, vanillin, and a dash of salt to the eggs, and stirring constantly to add flour or starch (I liked the cornstarch).
  • Turn on the stove to medium power and put the creamy mass on the fire. Cook the buttercream until it thickens (about 6-7 minutes). Refrigerate.
  • Beat the sour cream, add the custard base. Add sugar if necessary.
  • You can just beat the sour cream with sugar to taste (the cakes are sweet enough, so I only added 3 tablespoons). Then increase the sour cream by 400 gr
  • ASSEMBLY:
  • The cream turns out to be liquid, so it is better to collect in the form. For each cake there are 3-4 tablespoons of cream. Do not spare the cream. Leave the cake to soak for a few hours. Then you can decorate as desired.
  • I liked the most with GLAZE:
  • Mix cocoa, sugar, sour cream. Heat and boil a little while stirring. Remove from heat and add oil. Stir until smooth. The glaze is ready. The amount of sugar can be changed to taste. Here, the taste is closer to dark chocolate.

Thank you all, but the idea is not mine. I found this recipe when I wanted to bake something unusual (I love experiments). The cakes absorb the cream very strongly and swell. The last time I was greedy with cream (2 tablespoons per cake) and the cake seemed dry to everyone, but with tea it was fine. And when I almost swam in sour cream - it was just right. Try it! This cake does not leave indifferent.
