Seitan

Ingredients

Flour 500 g
Water 350 g

Cooking method

SeitanMix flour with water. Cover with foil and leave for 30 minutes at room temperature.
SeitanPour cold water into a bowl, put the dough there and let stand for 15-20 minutes.
SeitanWe put the bowl in the sink, turn on cold water and begin to wash our dough, pulling and variable it. The water will initially be white and must be constantly drained.
SeitanAs soon as the water becomes clear, the washing process is completed.
SeitanThe seitan should look like a rubber sponge.
SeitanSeitan is neutral in taste, so it should be cooked in a strong vegetable or mushroom broth. It is traditionally cooked in a broth with soy sauce and seaweed, but it can be tomato or mushroom. The taste of the broth greatly influences the taste of the seitan, since the seitan will absorb the taste and aroma of the broth. I put various roots, herbs and spices in the water. As soon as the broth boiled, soy sauce was poured.
SeitanShape the seitan into a sausage. This will be one of the cooking options.
SeitanWrap in cheesecloth and tie the ends, but not very tight. This is done so that seitan during cooking does not increase too much and does not become too porous. The gauze retains the desired structure of the seitan.
SeitanThrow the sausage into the boiling broth and cook for 30 minutes.
SeitanThe finished seitan will grow in size and pop up. Turn off the gas and let the seitan cool in the broth.
SeitanRemove the gauze. Now seitan is ready for further consumption, it can be stewed with vegetables, fried or rolled into minced meat. If you are not going to use it right away, then seitan can be stored in the refrigerator in strained broth for 7 days or frozen.

This is how wheat gluten is made at home, probably in a similar way in production. Wash the dough, all that is left is gluten, and then add it to the weak flour in this form or dry it, grind it and then add it.

I spent several years in such a wash. ))) At the elevator in the laboratory, this is how the quality of flour is determined - they wash gluten. If the flour is washed out and there is no clinker, or its scanty amount, then the feed grain. In the flour we eat, there will always be gluten and should be good. I would never have thought that it would be worth cooking. This is how much we missed. And they could eat tasty and healthy

Olga VB, Olga, No, do not dissolve, only the starch will be washed out. Then you can do whatever you want, it's essentially vegetarian meat, in the last paragraph I gave several examples. Once on some vegan forum I read that boiled sausage is made from seitan, which tastes very similar to the doctor's. The main thing is to choose the right spices and mix them into seitan (and this is not easy). And only then cook.

I did everything according to the recipe, rinsed in cold water for a long time, cooked vegetable broth in advance (celery, onions, carrots, turnips, garlic, parsley, thyme, rosemary, tomato flakes, allspice, black pepper, bay leaf, mushroom powder, soy sauce) and welded the workpiece in it. The result is a small sausage 15 cm long and 3.5-4 cm in diameter. It tastes like egg white, but elastic in consistency. I really liked this seitan, I immediately wanted to cook some kind of vegetable salad or fish salad with it, it would also work well. Somehow, for the sake of experiment, I will add it to fish or chicken mince, but not boiled, but immediately after rinsing.
