Ingredients

Light dough
Opara 130 g
Water 213 g
Flour 369 g
Salt 8 g
Dark dough
Opara 50 g
Water 64 g
Honey 20 g
Flour 121 g
Cocoa powder 20 g
Salt 3 g

Cooking method

  • We put PF, I always put a little more, then I bake two days in a row. 100 ml of our ZhD and 100 g of flour 1c or CZ, tea l of honey. After 5-6 hours, she added 100 ml of warm water and 75 g 1 s flour and 25 g rye. The recipe does not recommend adding water to the PF, but only flour. I added
  • We leave it until it doubles in volume (I had a night)
  • In the morning, the dough doubled and if you lift it from the edge, you can see bubbles

  • We take two bowls and weigh all the ingredients. Stir with a spatula and leave on the table for 30 minutes, it may seem that the dough is too dry, especially dark. Control yourself !!! And don't add water.

  • Then, one by one, at first light, we knead in HP on the dumplings program (I have 20 minutes)
  • Immediately after kneading, put the dough on the work surface and roll out two rectangles with edges 1-1.5 cm thick. Approximately 30/25 and 15/25.
  • Put the chocolate dough on white and cover it with white dough. Lightly roll with a rolling pin. Fold it in half again, and again roll it LIGHTLY. And this must be done a couple of times.
  • Don't overdo it with the rolling pin. Laminated, folded.
  • Fermentation with two folds every hour.
  • After the second folding, we send the dough to the basket for proofing. The total fermentation time is 5 hours.

  • We turn the bread onto baking paper, make shallow cuts and send the bread to the oven

  • Preheat the oven with a stone or baking sheet to 230 g and bake bread.
  • The first 20 minutes - 230 g, then 20 minutes - 210 g, the last 10 minutes - 190 g.
  • total 50 minutes total baking time.
  • It remains to wait until the bread has completely cooled on the wire rack and enjoy its taste)))
