Ingredients

Upper layer
White chocolate 240 g
strawberry / pistachio paste 64 g
vanilla
bottom layer
Milk / black chocolate 160 g
crumble 96 g
non-cafe coffee 1 tsp

Cooking method

  • Recipe from Pastry Chef Sarit Gez. Something in between candy and cake. Closer to what? Do it and decide for yourself-)
  • We need a silicone mold (I have a "sushi" silicomart), preferably square or rectangular with a hole inside.
  • I want to make a reservation right away - almost any filler (nutela, peanut butter, halva paste or any delicious pistachio type paste).
  • I wrote how to crumble here
  • So, let's begin :
  • We put all the ingredients for the top layer in a water bath, melt the mass and pour it into a mold 1/2 height (the mold is on the board). We do it carefully, we need beautiful layers! Now we do a few taps on a hard surface to expel air bubbles. We put it in the freezer.
  • We proceed to the second part. Melt the chocolate, add coffee, stir (there will be granules, this is normal), add crumble. Pour in the second half of the silicone molds. Knock to remove air. Put in the freezer for a few hours.
  • Reach out and enjoy
  • Pamper yourself and your loved ones!

I did it with pistachio paste, the chocolate let me down a little, it was fired badly, albeit expensive, of good quality. I had to add cream, the mass was thick, so the joint is clearly visible.
