My apples are small, I simplified the process of removing the middle for myself by punching them through with a knife to remove the core. I put the apples on foil, poured crumbled cookies on the bottom of the hole, then curd mass and baked in the airfryer. It turned out so gloriously, the juice from the apples and the curd filling soaked the cookies and the hole was sealed, this bottom held so tightly. It turned out a lot of little cheesecakes
