Ojakhuri

Ingredients

pork (neck) 0.5 kg.
potatoes 0.6 kg.
bulb onions 100 g
garlic 5 gr.
fresh tomatoes 200 gr.
salt pepper taste
greens bundle
vegetable oil for frying and deep frying

Cooking method

  • Ojakhuri is a national dish of Georgian cuisine. Translated from Georgian "ojakhuri" means "family" - such a dish is prepared for members of a large family.
  • Ojakhuri is served on a ketsi - a special Georgian clay or stone frying pan, but in the absence of such a frying pan, the dish can be served in a cast-iron frying pan or on simple plates.
  • Rinse the pork, dry it with a paper towel. Heat a pan (preferably thick-walled), pour in a tablespoon of vegetable oil, lay out the meat, salt and pepper to taste. Fry until golden brown.
  • Peel the onion, rinse it, cut it into small half rings, put it in a pan with the meat, stir.
  • My potatoes, peel, cut into medium-sized cubes, deep-fry, salt. Put in a frying pan with the meat and mix.
  • Peel the garlic, chop finely, add to the pan, add spices, finely chopped herbs (parsley and basil), mix.
  • My tomatoes, cut into small wedges and put in a frying pan. Stir and cook for another 5-7 minutes.
  • We put Ojakhuri on plates, decorate with herbs.
