Thanks to the author for the dry eggplant recipe. I did it on trial, grind it and have already used it in different dishes. A very unusual product turns out, however!

There was a desire to add a little bit of garlic: either during drying or later, in the finished seasoning (but previously dried).
Nobody tried it?

Now I plan to dry a full portion so that it will be enough for the winter.

KatrinI don't know how the girls did. About adding garlic, individually. If you add, as for me, then quite a bit, so as not to clog the smell of herbs. Or just make eggplants with dried garlic as a separate seasoning.

I made eggplants yesterday. I did everything according to the recipe .... I have an electric stove but without convection, I opened the door to let off steam. My eggplants were so stuck to the paper that it was impossible to peel them off. Why? I decided that the leftovers did not dry out in the stove and which separated from the paper to dry in the dryer. BUT I really liked the taste of the eggplant from the stove ... very rich ... but not at all from the dryer.

Angela, thanks a lot for the recipe! I twisted dried eggplant, bitter pepper and rosemary on a coffee grinder. Now we use this seasoning in all dishes, except for dessert.

Angela, thank you very much for the recipe! I liked the smell very much, but I experimented a little. I took a bitter jalapeno pepper, a jalapeno pepper with zero bitterness, abaldenous smell and dry rosemary. Half a liter can is already ready from 5 pallets. I will fill it completely as soon as I deal with the tomatoes and the plums. And the eggplants will just pour over the garden bed.
