Ingredients
White cabbage 1kg
Walnuts 100 gr
Ground coriander seeds 1 tbsp
Ground fenugreek seeds (utskho suneli) 1 tsp
Imeretian saffron 1h. l.
Garlic 3 cloves
Wine vinegar 9% 1 tbsp. l
Fresh coriander 0.5 bunch
parsley 5 sprigs
leafy celery 3 sprigs
hot red pepper and salt to taste
Onions 1 head
Pomegranate 0.5 pieces
Cooking method

Boil cabbage as for stuffed cabbage. Remove nubs and chop finely. Add finely diced onions, crushed garlic, vinegar, ground nuts, spices, salt, pepper. Mix everything well. Finally add the pomegranate seeds and stir gently. If you are not lazy and really want to surprise the guests, make a mixture of nuts and all the ingredients, take very small cabbage leaves, grease with this mixture and fold in an envelope, as you wrap pancakes. Top with .2 kg pomegranate seeds. enough cabbage for a table of 15 people

Since I don't really like boiled cabbage, I borrowed this method from one good housewife:

I cut the cabbage into 8 parts, moisten each slice in salted water, roll in corn flour and fry on one side in a hot pan in vegetable oil. Turn over, cover and reduce heat to medium.
I spread it on a paper towel to remove excess oil.
And then everything, as Gayane writes, I do.
I really like this kind of roasted cabbage and no spices. But I did it in the summer, then the cabbage was softer.

Umka, Luda, our cabbage is not as hard as in Russia. I take a round, light fork, cut out a stump and put it in boiling, salted water. In the process of cooking, I remove the top leaves. They are already soft. It is not necessary to boil the leaves very much. If the forks are heavy, this is cabbage for borscht. You can pre-hold for 2-3 minutes in a micron.
