Ingredients

Beet 1-2 medium size
Carrot 1 PC.
Zucchini 1 PC. medium size
Sweet pepper 1 large
Potatoes 1 large
Sweet and sour apple without peel 1 PC.
Greens (cilantro, parsley, dill) bunch
Spices (clove - 1 pc., Allspice (2-3), bay leaf taste
Hot pepper and garlic taste
Salt and sugar taste
Red currant juice 0.3-0.5 cups
Water (broth) 1.5-2 liters
Vegetable oil 2-3 st. l.

Cooking method

  • What to do if there are no tomatoes and no cabbage was planted. Cook borscht from what has grown!
  • I assure you, no one will guess that the usual ingredients are missing.
  • I have been cooking such soups for a long time, I share today's version, it seemed very successful.
  • - Saute chopped onions and carrots for a few minutes in a couple of tablespoons of vegetable oil directly in a saucepan in which we will cook our beetroot. We stir so that the onion does not burn. Then add sweet pepper cut into thin strips.
  • - Add the beets grated on a coarse grater to the vegetables and fill them with red currant juice, stir immediately so that the beets do not fade.
  • - Add all the spices, salt and sugar to the beets, hot pepper to your liking, crushed and chopped garlic, mix. If there is not enough juice, then at this stage you can pour a couple of tablespoons of water into the pan. We simmer under a lid on low heat for five minutes.
  • - Then add zucchini cut into thin strips into the pan - "mow", so to speak, under the cabbage. Then we send potatoes cut into small cubes to the vegetables. After slicing, it is better to rinse potatoes with running water to remove excess starch and cause excess foam.
  • - Pour vegetables with boiling water (broth), boil until the potatoes are cooked.
  • - Add the peeled and cut apple into strips or thin slices into the boiling beetroot, bring to a boil, taste, season and turn off.
  • - Let it brew for 10 minutes and serve with sour cream. You can even pour garlic with sour cream and put each on a plate, all the same, oddly enough, it goes well.
  • Delicious, bright in color, refreshing, sweet and sour, spicy, unbroken soup, which nevertheless does not fall to taste from the galaxy of classic familiar borscht. At least no one noticed the lack of the usual ingredients in me!

Note

Do not pour the juice, it is quite sour in nature.
This beetroot "sounds" especially well from summer vegetables, but it helps a lot in winter or during fasting.
