Strawberry natural powder (flour)

Ingredients

Strawberries are fresh, large and not very, but not watery

Cooking method

  • I have been ordered to tell you about the variant of harvesting strawberries - strawberry dust. I don't have any photos yet. Someday I will definitely add.
  • I cooked it only in the oven due to the lack of a dryer on the farm.
  • Contrary to what it seems, strawberries absolutely do not lose their amazing taste after drying, and useful substances remain in it in large quantities. Dried strawberries are delicious and healthy.
  • So, it is better to choose a dry berry. Bigger. So dull, not very shiny. I don’t know how in your area, but our Brest strawberry is good to take "Polskaya". But it is better not to use the "Festival" variety. The berries are especially good, from which the stem is removed along with the stalk. No, not because the rod is not needed. It's just that there are such berries - you peel them and just strive to pop out the rod by accident. Here they are usually matte, fleshy. They have frequent seeds and the color is dark closer to burgundy.
  • Peel the berries, wash, let the water drain. Then the strawberries need to be laid out on a paper towel and dried. I just put an absorbent cloth specially designed for drying berries on a large table and lay out the washed berries in one layer on it.
  • Now cut the berry into "slices" as thin as possible along or across (not the essence).
  • Preheat the oven to 75-80 degrees. Cover the baking sheet with paper. Lay out the strawberries.
  • Dried for 2-3 hours (depending on your oven). They will dry out and stick at some stage. They must be carefully pry off with a knife and turned over to the other side. This will make chips. Already tasty, but early.
  • Grind the cooled chips into dust. DONE! You can sift, but I'm very sorry. And it's very tasty to find a piece in a salad.
  • Nuance:
  • Quote: kubanochka
I was grinding in a glass blender. It seemed to me that the powder acquired some kind of moisture after grinding. In general, I put it on a pallet to dry in a dryer. Just a little bit.
  • note!
  • Store in a dry place in glass with a lid.
  • Dust application:
  • - a mixture of dust and salt. excellent seasoning for meat, fish, poultry, making sauces.
  • - mix with soft butter. Strawberry oil - yum !!!!! The aroma is stunning!
  • - additive for creams in fillings and interlayers of pies, cakes and pastries!
  • - mixture with powdered sugar. Very beautiful color and aroma when sprinkling baked goods and making desserts!
  • - additives to cereals, bran and yoghurts. And just with any sour milk and milk!
  • - additive in salad dressings ...
  • - additive to tea!
  • and what else will your fantasy tell you!
  • Strawberry natural powder (flour)
  • breathtaking dust, "Tsarskaya" I would say from strawberries! It turns out an expensive product, but a pinch of freshly brewed tea or cream will just blow your head off from the aroma! who has this berry in large quantities highly recommend. well, at least a garden ...

I cut strawberries with an egg cutter. Time! And a bunch of plates of the same thickness. I dried it in Isidri and Travola dryers. Dried on nets and grates. It doesn't work well on marshmallow pallets. Sticks very hard, difficult to peel off. It's easy from the lattice. Did not turn it over during drying. Grind a 2 liter jar of chips. Not ground into dust, left in small fractions. From the calculation, you never know where I need. Maybe just this size will be needed. I decided that if I really needed powder, I would use a coffee grinder to turn a specific batch into dust at the right time.

Irisha, well, why are you shaming me so?
For your own sake, I am concerned about the completeness of placing ABSOLUTELY ALL recipes in the section
See for yourself how much you wrote in the recipe, how many subtleties - and all this could be lost somewhere in the bowels of the forum or in the recipes of other authors

Irisha, thanks for the strawberry recipe!

I'll add from myself - if you dry strawberry (and not only) chips in dryer, then you can take substandard strawberries, crumpled and with barrels, which will turn out to be much cheaper, and it's not so pity to put them on chips

The cream cakes are delicious. I also make strawberry powder. Only in whole rolls dry. Cutting them, you know ... There waaaaascheeeee! The aroma is crazy.
Tumanchik, you are just a fine fellow that laid out the recipe. I was afraid that they would laugh.
Elina
Thanks for a wonderful recipe! Only the word "dust" is not pleasant, I will call it "powder".

of course Anya! I forgot to write about the dugout. I wrote in Temko, but here I forgot. thanks for reminding me. earthy dust of the current in dreams! but her aroma is generally incomparable and angelic! well, at least garden strawberries ...
I'm also worried about whether the aroma will persist in the dryer. Dried apples in the oven and dryer are very different in flavor!

Irishka, I don't have a dryer and won't come across it. I dry in a convection oven at 60 degrees. The aroma is preserved if stored in glass. In plastic, some kind of foreign smell appears. I dry strawberries from my forest, they are sour here, just awful. And in powder. But friends bring sweet things from distant forests, and they are eaten at the speed of sound.

Sometimes my neighbor (not even mine, but my mother's) brings me strawberries from the outskirts of Belarus. but carries it immediately covered with sugar. since it is difficult to drive far without a car. but if it shares, then it's a holiday! frozen

And then, more dust in the scoop asks

Thank you Elina for the hint "how to call it" is more correct

Tumanchik Irisha, what a tempting recipe. While there is still a strawberry, you need to make a flavorful addition for desserts. Thank you.

It was cold here, now it’s heat and downpours, I don’t know what will happen with strawberries - I will not see strawberry flour

Helen is smart! Thank you very much for trusting the recipe! And special thanks for the details. Of course, they should be included in the recipe.
A question for you too - what did you dry in? If in a dryer, can you tell me more? How and at what temperature?
As for the moisture content during grinding, it can easily be. But the berry is probably a little under-dried. I'll add it to the recipe! Thank you.
I will be very grateful for the photo to draw up the recipe.

And I decided to gradually convert dried fruits into flour as they were consumed - the stocks of grains in a small jar ran out, I'll dare - it's not done for long

I came to report. The strawberries are watery. It took not 2-3 hours to dry, but it took longer. In the middle of the process, I even had to transfer the slices to new sheets of paper, since a lot of juice was released and the temperature increased. However, patience and the desire to have a tasty treat prevailed. The strawberries were just over a kilogram, and the result is in the photo. She put boxes in a row for the scale. I decided to leave it in the form of chips for now, I will always have time to grind it, and suddenly a beautiful slice is needed somewhere.

Who has a long history of storing this kind of flour
Admin, Tanya, well, if my fiber baking powder is flour, then I have experience ... It is stored in metal tea jars for about a year. The aroma only intensifies. And the color remained the same. And the properties have not changed - just as useful (tested on myself), tasty and aromatic.
Quote: Admin
Something seemed to me (using my blanks as an example) that flour can gradually discolor, and the taste is lost
Tanya, my dried vegetables and greens also discolored if they were in a transparent container, even in a semi-dark pantry. The fiber and baking powder, however, remain the same color as a year ago. But they, I repeat, lay in metal jars, like in a recipe for fiber. You can go to RECIPE and compare the color. And you can take my word for taste and aroma - wonderful!
Here, now I photographed the remains of fiber and apple pomace powder. You see, everything is in place, just like a year ago.

I, kaneshna, very sorry ...
but my information will be very interesting for those who do not have strawberries, or do not have a dryer, or do not have the time and desire, or do not have everything at once ...

such strawberries, ground into flour, 113gr - 1240 rubles 06kop are sold on ayherb.
as well as banana, raspberry, cranberry, blueberry and blackberry flour ...
it is stored for a long time without loss of color and taste (it initially has almost no smell), only very hygroscopic.

Girls, the second day I'm drying these chips ... They don't crunch in any way, I'll try - dry, but plastic. How to dry them to a crumbly state? I already want strawberry powder, but I'm afraid the coffee grinder won't cope with such
I have a simple dryer - Smile, I just bought it to play, I did not plan to dry it on an industrial scale. In winter I tried to dry apples, bananas, oranges - I liked everything, but with strawberries some kind of ambush
ang-kay
Natalia, me too. After baking the pies, I put them in the oven and turned them off. Everything worked out in the falling temperature
notka_notka
Angela, that is, I need to pick everything from the grates of the dryer and into the oven? Oh, I don't like such dances. The heat is on, they will kick me out of the house for unnecessary heating of the air
Of course, according to Irochka's method, it was necessary to do so - in the oven, but I saw what the girls were doing in the dryer ... So I am suffering now. Okay, I'll wait some more. I turned off the drying at night, now I turned it on again,
ang-kay
I tore it off, stood with me for three days just open in the dishes, and then threw it on occasion. Something I do not like with the dryer.
notka_notka
Angela, I'll probably do that too, thanks. I'll wait, suddenly the rain will pass and cool down. And with a dryer, yeah, a toy for pampering food takes a lot, you clean it, you cut it for a long time, and at the exit - a handful of unhappy
Tumanchik Irochka, thanks for the recipe. All the same I will achieve the final result without fail !!!

Something I do not like with the dryer.

Angela, girls, compare the drying temperature in the dryer (maximum 60 * C) and in the oven when drying (100-140 * C) - of course, it will "fry" more in the oven and may even burn out And in the dryer the chips will always be plastic
And you should take into account the sugar content in fruits - the more it is, the softer and more plastic the drying will turn out, maybe even slightly damp, even when the chips are fully cooked.

It was like that with a pear in drying - an ordinary variety near Moscow is unsweetened, dried to a crunch, and the market one is large, sweet, soft, and remained sticky after drying, it still sticks to my fingers. Although both pears are completely dehydrated, dried, stored normally all winter - it is impossible to dry the sugar syrup in the fruit!

Natasha, and you think I have a lot of tomato-pepper-prunes, a lot, after drying in the oven?
Figs to you - called! You can see from my photos how much they "fried-evaporated" in the oven at T * 120 * - horror!

It's all pampering, all preservation - but delicious! And in winter it pleases with its diversity, taste, gives joy

Not "pampering" only canned cucumbers with tomatoes, there are a lot of them in the jar, and then only because in a large amount of liquid they float, which creates volume
