Oriental-style meatballs in a spicy soy-ginger glaze

Ingredients

Glaze for about 800 g minced meat:
Soy sauce 1/4 Art.
Ginger root (juice) 1 tbsp. l.
Sugar (brown is better) 3 tbsp. l.
Corn starch 1.5 tbsp. l.
Ground hot pepper 1/2 tsp
Black pepper taste
Sour apple juice, rice vinegar plus water, apple cider vinegar plus water, cider 1 tbsp.
Paprika and salt 1 tsp.
Pork or chicken meatballs from 800 g minced meat:
Pork or chicken fillet 700 g
Bulb onions 1 PC.
Hercules quick cooking (semolina) 1 tbsp. l. horseback (1 tbsp. l.)
Sour green apple without skin 1 PC.
Garlic 2-4 cloves
Ground pepper taste
Cheese (in minced chicken) 30 g
Salt taste
Cilantro handful
For filing:
Boiled rice in portions
Soy sauce
Green onions or cilantro for garnish
Sesame white or black

Cooking method

  • I love fusion cuisine very much, especially in its southeastern interpretation - there is room for imagination!
  • And then suddenly a friend appeared - a lover of spicy foods. Nothing ready was observed in the refrigerator, except for a small amount of minced chicken with the addition of cheese and rolled oats for juiciness. (I used this minced meat for another dish yesterday). And then I remembered the Chinese version of the glaze. In 20 minutes, the original dish was ready.
  • - We make minced meat from the listed products. Put the onion into it a little until soft in a frying pan greased with vegetable oil. Rub the apple without skin. It is better to pass the minced meat through a meat grinder twice, the balls will turn out to be more even and not loose. The size of the meatballs is 2.5 cm in diameter.
  • - We bake the meatballs quickly under the lid in a preheated oven for about 20 minutes under the lid. I used a small Ultra Pro baking dish from Tapperware.
  • - Rub the ginger on a fine grater and squeeze the juice. Mix everything for the glaze in a small bowl. I used a slightly fermented apple juice today. It works just as well with homemade apple cider vinegar mixed with water (the solution should be quite acidic, concentrated, try it to your taste).

  • - Cook rice according to your favorite recipe without salt. It will be replaced by soy sauce when served. I cooked in a Tapperware rice cooker.
  • - While the rice is boiling, pour the sauce into greased with vegetable oil (preferably light sesame seeds for authenticity) and heat over low heat, stirring occasionally. Then, without delay, put the meatballs into the pan and fry, stirring constantly, so that they are completely covered with glaze. It is better to sprinkle the meatballs with starch so that the sauce sticks better, I had no time.
  • - Serve with rice and soy sauce, sprinkle with sesame seeds, cilantro or green onions slightly dried in a dry frying pan. In my opinion, dill and parsley do not go here.

Note

Spicy, spicy, unusual! You can cook peeled shrimp in this glaze. You can add a slice of grated garlic or a couple of pinches of garlic powder to the icing, but I had enough garlic in the minced meat.
I have been making such glaze for a long time by eye, the calculation is given for a fairly large amount of minced meat.
