Overseas caviar (eggplant) in a special way

Ingredients

Eggplant 1-2 pcs.
Bulb onions 1 PC.
Small carrot 1 PC.
Red sweet pepper 1 PC.
Seasoning mix 1 tsp
Tomato paste 2 tbsp. l.
Unrefined sunflower oil 4 tbsp. l.
Dill 1 branch
Basil (preferably green) 3 twigs
Cilantro 3 twigs
Garlic 1-2 cloves
Granulated sugar 1/2 tsp
Salt pepper taste
Sauce taste

Cooking method

  • It would seem that what can be changed in the already known, one might say "standard" dishes? But, having once visited the Caucasus, I was surprised to learn that one of my favorite dishes is prepared in almost every family in different ways! Can you imagine over 50 options for making kharcho? Likewise, eggplant caviar, familiar to us from childhood, can be prepared in different ways, "adjusting" it to your taste. And of course, it is hardly worth saying that such homemade caviar will be tastier and healthier than purchased in a store! So try it, you won't regret it !!!
  • About products.
  • We use the most common eggplants, onions, carrots and peppers. Sunflower oil should be only real, not refined; as a last resort, you can use olive. You can use any greens you like, but you should not "throw out" basil and cilantro from the recipe. The amount of greens and garlic can be increased or decreased as you like. Tomato paste can be replaced with two or three ground tomatoes, but with real ground tomatoes. Any kind of greenhouse surrogates will not work.
  • Cooking.
  • 1. Wash eggplants, cut into large pieces, salt and put in the refrigerator.
  • 2. Wash carrots, clean, grate, put in a pan.
  • 3. Peel the onion, finely chop (put in the pan too).
  • 4. My pepper and finely chop (and also put in the pan).
  • 5. Salt everything in the pan, sprinkle with the mixture of "Provencal herbs", pour with oil, add tomato paste, granulated sugar, mix thoroughly and set to simmer over low heat until tender. For two or three minutes before the end, lay out finely chopped herbs and garlic.

  • 6. Grease the baking dish with vegetable oil, lay out the eggplants and set to bake at 180 degrees for 50 minutes. Keep in mind that there is another option for cooking eggplant: a double boiler. In this version, 25-30 minutes is enough, it turns out just fine!
  • 7. We take out the eggplants, cool. Peel off the pulp with a spoon or knife (no skin is needed) and put it with other vegetables in a pan. Let it cool down (I generally always specifically cool it in the refrigerator).
  • 8. Using a blender, turn everything into a homogeneous mass, that is, into caviar. If you like "spicy", then add hot sauce at this stage. (Here's what's good: most likely not every member of your family loves spicy, so, first we turn everything into caviar, set aside, say, half, then add a spicy sauce, scroll a little again and ...….). And then we eat all this deliciously !!!!!!!!

Each housewife will have a borscht taste of her own, so I'm not surprised. My mother-in-law constantly asks me to cook a beetroot when we meet. I say that there is nothing special about beetroot. But she: "I can't do that."
Dmitriy, the recipe is interesting, but we don't like basil and cilantro. Or "we just don't know how to cook them"
