Elk ribs in tomato sauce

Ingredients

Elk ribs (beef) 1.5KG
For the marinade:
Tomato paste 3 tbsp. l. with a slide
Dry white wine 1 st
Vegetable oil 2 tbsp. l.
Sugar 1 tbsp. l.
Bulb onions 3 pcs
Large carrots 1 PC
Peppercorns 7 pcs
Fresh thyme 10 twigs

Cooking method

  • Rinse the ribs, cut in portions.
  • For the marinade, chop the onion and carrots. I do in Thermomix with knives at 5 speeds. You can grate.
  • Grind the pepper in a mortar
  • Mix all marinade ingredients.
  • Place the ribs, stir so that the marinade completely covers the ribs on all sides. Close and refrigerate overnight.
  • In the morning, put together with the marinade in an ovenproof dish with a lid and cook. There are options here. Can be baked in the oven for 6 hours at 160C. Then leave to cool in the oven for another 2 hours.
  • I slow cooked for 3 hours on high, 4 hours on low.
  • Serve with the resulting sauce.
  • I would also like to say about salt... There is no salt in the marinade by definition, because salt draws juice from the meat. Slow marinade cooks the meat with salt from the food. Therefore, I do not salt at all. The meat is harmonious in taste. BUT I know that many do not accept this method of cooking (without salt), therefore, the dish can be salted to taste 30-40 minutes before the end of cooking.
  • Delicious! Real mens food. No side dishes !!!! The tomato paste marinade is great for quick marinating. And the vegetables turn the marinade into a complete sauce after cooking. Out of liberties - you can dip bread into sauce.
