Ingredients

Mackerel, fresh frozen 1 kg. (2 fish)
For the marinade:
White sugar 1 tsp
Coarse sea salt 1 tsp
White peppercorns (small) 15 pcs.
Allspice peas (large) 10 pieces.
Dried thyme (or fresh) twig
Dried or fresh rosemary
For dry mix:
Rice ordinary round 12 Art. l.
Brown sugar 3 tbsp. l.
Large leaf green tea 4 tbsp. l.
Rosemary sprigs (fresh or dried) 1 large
Thyme branch 2 pcs.
Juniper berries 10 pieces.
Liquid smoke (optional)

  • And now I have it, I can't believe my eyes. HURRAH! HURRAH! HURRAH! If not a trifle ... the gas was turned off for a whole month. Then the holidays, departure, since we live in a renovated house under a state of siege. Upon arrival, I first flew to the store for fish. Only mackerel was sane in terms of price and quality. So that's great! Budgetary in case of failure!

My remarks:
1. Take more fish at a time. And it turns out a little expensive. I think 1.7 kg is easy. This is about 3-4 fish.
2. We must try next time (and it will definitely be) to apply the middle row so that the juice (although there is not a lot of it, since the fish has dried well) does not drain onto the mixture.
3. This is certainly not pure water smoking, but no less tasty and effective!
4. It is necessary to let the haze flare up well. Otherwise, the aroma will not come out. And remove the lid quickly and only to lay the fish. Do not remove the cover again.
5. The fish will cook quickly and there will be no smoke (if there is a hood). In 20 minutes we had no trace left.

I have a simple grill gas for 3, 5 years. I cut the fish into smaller pieces and place it tightly from the edge to the center. I can fit 4 mackerel or herring. I did not know about such a method with a smoke. Do you need rice, maybe you can replace it with other cereals?
