Ingredients

Madeleine of white chocolate:
White chocolate (for 3 candies) 45 g
Cream (orange and lemon Kurd) 45 g
Madeleine of dark chocolate:
Black chocolate (80+ 50) for 6 candies 130 g
Prunes 60 g
Rum or cognac 1 tbsp. l.
Almonds (coarsely chopped) 1 tbsp. l.
Cream (35%) 50 g

Cooking method

  • Madeleine of chocolate with filling: white with orange-lemon curd, and black with ganache, prunes and almonds. What is not a gift for the holiday beloved girlfriend or beloved man ?! I think they will be fascinated because you made them yourself!
  • Madeleine of white chocolate:
  • Melt chocolate in a steam bath or microwave. Apply a thin layer over the entire surface of the silicone mold. Put in the refrigerator. Apply another thin layer of chocolate and refrigerate again for 5 minutes.

  • Fill the cavity with Madeleine Kurd (link to recipe I house below) and put in the freezer for 15 minutes.

  • Apply a thin layer of chocolate on top and smooth it over the edge of the mold. Put in the refrigerator and set well.

  • Cut prunes into small pieces and pickle with rum.

  • Heat the cream almost to a boil and pour over 50 g of dark chocolate cut into pieces. Let stand for 2-3 minutes and stir until a smooth and shiny mixture. Allow to cool.
  • Put 80 g chocolate into molds in the same way as white.

  • Fill with chopped prunes and almonds and top with ganache. Place in the freezer for 15 minutes.

  • I only have one shape, so I made black and white candies in parallel.
  • PS For some reason, it took more white chocolate than black, this is based on 1 candy.
