Chickpea tortelli

Ingredients

dough
flour 140 g
butter 10 g
powdered sugar 10 g
eggs 1 PC
White wine 2-3 st. l
salt pinch
filling
chickpeas (boiled) ~ 150 gr
chestnuts (boiled) 30-40 gr
candied lemon ~ 30 g
sugar ~ 1.5 tbsp. l
the grape juice
cinnamon
salt

Cooking method

  • Prepare the dough
  • Knead the dough with the listed ingredients and let it rest for a while.
  • For filling
  • Cook the chickpeas pre-soaked for several hours and grind it in a blender along with the chestnuts (I took them from the package) until smooth. Pour in the grape juice until smooth and smooth.
  • Add finely chopped salt, cinnamon and candied lemon. The filling is ready.
  • Then roll out the dough thinly, cut out the circles, spread the filling on them and mold the tortelli in the shape of a moon quarter (if you have different adaptations for dumplings or ravioli, you can use them).
  • Fry in boiling oil until golden brown, first on one side and then on the other.
  • Place the finished tortelli on a paper towel to remove excess fat, then transfer to plates and sprinkle with powdered sugar.
  • Chickpea tortelli

Note

The recipe is taken from the book "The Science of Cooking and the Art of Absorbing Food" by Pelegrino Artusi with minor modifications.

If there are no chestnuts, then it is quite possible to do without them. Adjust the sweetness of the filling to suit your taste. The dough, in essence and to the taste, is a dough for "Brush" cookies.

Oh, how lovely! Recently in Magnit I saw chestnuts, I also thought "what to do with them?" And that's what! If only they were still on sale today ...

Natasha,
The author takes chestnuts in the recipe, but in principle it is possible without them. Instead of chestnuts, I think you can try adding, for example, figs, or apricots, or dates (dried fruits, I mean).
And there is a lot to do with chestnuts

Galina, great recipe! Thank you!!!
With the filling, as far as I understand, you can experiment endlessly, and each time it will be a new dish.

Jackdaw, you are a culinary pervert!
You always invent something out of such interesting ingredients - at least stand, at least fall!
It looks, of course, amazing!
