Wheat flour, premium 500 ml (2 stacks)
The water is cold 130-150 ml (2/3 stack.)
Egg 1 PC.
Sunflower oil 1 tbsp. l.
Salt 1/2 tsp
For filling:
Mixed minced meat 300-320 g
Bulb onions 1 PC.
Salt pepper taste
Seasoning for meat / minced meat optional
Sunflower oil for frying
Water 100-120 ml
For filing:
Sour cream 10-15%
or
a mixture of sour cream and kefir / yogurt
Garlic taste

Cooking method

  • I want to share with you a recipe very beloved in our family. I dedicate it to the main eaters - husband and son.
  • Cooking.
  • Kneading the dough.
  • I am preparing the usual dumplings dough. I like the option offered in the ingredients. (You can use your favorite recipe) I used to knead the dough with my hands, now I make it in a bread maker on the “Pasta” mode. I do not even close the C / P lid during kneading to help the dough if necessary. Sometimes you have to add a little flour for the bun to form normally. But, nevertheless, the dough is not too steep. After the signal (after 14 minutes) I close the C / P lid and leave the dough to stand for 20-40 minutes. During this time, I prepare the filling and the cutting table.

  • Filling.
  • Any mince can be used. In not the best times, I used purchased chicken. Now we only make minced meat ourselves. Typically mixed with chicken and pork or pork and beef.
  • I defrost the minced meat a little. If you put it in the freezer when freezing with a thin cake 2-2.5 cm (like we do), then 20-30 minutes outside the freezer will be enough for it to become plastic.

  • I cut the onion into small cubes, fry in a pan until golden brown.

  • As soon as the minced meat is well browned on all sides, I salt it, pour cold water into it.
  • I close the lid, reduce the heat and let the minced meat with onions sweat. There should be enough liquid in the finished filling. This broth gives a special juiciness to the minced meat and is useful when serving.

  • A silicone mat is very convenient for working with this test. But, if this is not the case, you can use a regular board, sprinkling abundantly with flour.

  • I put a large wide pan on the stove, pour water to a level of about 20 cm, add some salt. I throw dough squares into boiling water. (They are easily separated from a well-dusty board, and even easier to jump off the silicone mat.)

  • The squares are boiled very, very quickly: as soon as they surfaced, you can get it. I catch the finished squares with a wide slotted spoon.
  • Advice. 1. If your dough does not separate well from the board, do not regret flour for burning. You can separate the squares with a wide knife, fold them on a flexible board and pour them into the pan from it.

  • When my son was little, I made ready-made sour cream sauce with garlic so that the child was not spicy, and dad would add garlic to himself later as he wanted. Now, when my son is already 19, and he is friends with garlic, it has become easier. I put in the sour cream, I put in the garlic and garlic. Each eater himself adjusts the pungency and amount of sauce.

How our family treats dumplings is worth mentioning. I think my husband is ready to eat them every day! And why does a Belarusian have such love for a Siberian dish ?! I think that the reason lies not in the parental family (they don’t buy dumplings or make them there), but in the students. Independent life for 6 years in Leningrad, student construction brigades in Siberia, bachelor life - all this played a role. Now, as soon as I leave for the summer to my parents, my husband's "dumplings" life begins, although he cooks many dishes no worse than me.

I am indifferent to dumplings, but for the sake of my beloved men I go to the feat - I mold myself. : girl-yes: Here my husband is my first assistant - and roll out the dough, and help to sculpt, and, most importantly, helps to count! Gently, with love (the whole thing glows directly), he puts dumplings in even rows in a pallet, counting and grumbling under his breath: "It will not be enough."

Somehow, quite imperceptibly, another lover of dumplings, a son, grew up. Always happy to support his father's proposal to eat dumplings. (These are probably genes?)

And in such a lovable family, a dish appeared that became an alternative to traditional dumplings. A small note in the newspaper "Friend of the House" marked the beginning of a new love ... now for "Dumplings Salad". For 15 years now I have been preparing this dish. It is always pronounced with joy and with a certain respect: "And today we have" Dumplings salad "!" They wait, they endure, they work up their appetite.

Today my husband was surprised, finishing the second portion: "Do you know, if you choose between dumplings and dumplings salad, I will choose HIM!"
