Altai gingerbread

Ingredients

Wheat flour 950gr.-1050gr.
Egg (yolk) 2 pcs.
Egg 1 PC.
Sour cream 250gr.
Kefir 250gr.
Sugar 2 glasses.
Butter (melt) 50g.
Salt 1/2 tsp
Soda 1/2 tsp
Baking powder 1/2 tsp
Glaze:
Egg (protein) 2 pcs.
Powdered sugar 1 glass.

Cooking method

  • I posted here on the site the Altai pie, now it's the turn for the gingerbread.
  • So, let's begin...
  • Mix sour cream, kefir, butter, sugar, eggs and yolks, add salt and soda.

  • Mix flour with baking powder, sift and gradually add to the liquid components. Knead not thick, soft dough.

  • Sprinkle the dough with flour, put in a suitable bowl and refrigerate overnight.
  • In the morning, take out the dough, roll it out 1.5-2 cm thick, cut it as you like, I have special notches for cookies, you can just cut it into squares, or with a glass - circles.

  • Put on a baking sheet, bake at T 180 *, 20-25 minutes, until golden brown.

  • While the gingerbread is baking, make the icing.
  • Beat egg whites with powdered sugar into a strong foam.

  • Cover the finished gingerbread cookies with glaze, decorate as desired, let dry a little.

P.S Yes, there is a lot of glaze, so you can use only half of the recipe if you find where to attach the remaining protein. I baked a meringue from the leftovers.
