Ingredients

FOR BASIS: Fatty cottage cheese without grains 500 g
Large eggs 2 pcs.
Granulated sugar 4 tbsp. l. slightly riding
Starch or flour 1 tbsp. l.
Lemon zest 1 tsp
Vanilla sugar 1 tsp
FILLING:
Sweet and sour apples without peel 4-5 pcs. middle
Granulated sugar 2-3 st. l.
Cinnamon 1 tsp
Sour cream 20% 500 ml
Softened butter (or 1 tbsp. L. Gelatin) 80 - 100 g
Granulated sugar 4 tbsp. l.
Lemon zest and juice with non-acidic sour cream 1 tsp
Vanilla sugar 1 tsp
Grated chocolate 20 g

Cooking method

  • The family recipe for a cake from a series of curd baked goods offered by me is very original in taste, despite the ease of production and familiar products. I always cook it for large and small feasts as a second cake, and especially for gatherings with girlfriends.
  • It is served very cold, and the taste is highly dependent on the quality of the products and the choice of apples.
  • It is better to choose apples sweet and sour and juicy. The curd base is quite tangible here, so we carefully choose the curd for this recipe - it should be plastic (it is better to weigh it out very wet), without lumps and not acidic.
  • Sometimes I make this cake for the family, it is happy to eat it for breakfast or afternoon tea.
  • Calories are few, but there is benefit! Moreover, it is tasty, inexpensive, easy-going and all-season!

  • Preparation
  • - We wipe the cottage cheese through a sieve, if the cottage cheese is without grains, then you can do without this procedure.
  • - Lightly beat the eggs with a whisk with sugar and vanilla sugar, flour or starch, add the zest. Stir until sugar dissolves. We mix the mixture with grated cottage cheese, knead well.

  • - A baking dish, preferably glass or ceramic, grease with sl. butter, sprinkle with flour using a strainer. Shake off excess flour from the form.
  • - We spread the curd dough on the mold, forming a very thin side. I do this directly with my hands slightly moistened with water.

  • - Peel the apples, remove the core and cut into slices, a little more than 1 centimeter thick. I cut it with a standard apple slicer, and then cut the resulting slices into two equal parts. It turns out just the ideal thickness.
  • - Put the apples in a circle tightly on the dough, slightly pressing into the side and into the base. If apples of different varieties are used, which is welcome in this recipe, then they must be stacked alternating. In the resulting gaps, we put the scraps. We try to fill the space more fully.
  • My shape is very large - 30 cm in diameter and low - 3.5 cm, so I put it in one layer. If the form is higher, then it can be laid in two layers.
  • - Sprinkle apples with cinnamon and sugar.
  • - We bake in an oven preheated to 170 g for about 25 minutes. Here, the main thing is to see that the apples become soft (we must check with a splinter), and the sides and bottom are not fried too much, otherwise the crust we do not need will appear. Cool the baked apple base completely.

  • Making sour cream.
  • Here are two options.
  • 1. Whisk sour cream (non-acidic) and softened high-quality butter with sugar, add zest and quite a bit of lemon juice, if sour cream is fresh. Butter and sour cream must be at the same temperature.
  • 2. For a more dietary option, beat the fat sour cream with sugar and mix with 1 tbsp. spoon without top gelatin, swollen and dissolved according to the instructions in a small amount of water.
  • Fill the entire surface of the chilled base with sour cream, sprinkle with grated bitter chocolate and put in the cold overnight. Be sure to cover the top of the cake so that the cream does not wind up.

I highly recommend the cake to lovers of cottage cheese baking. It is, indeed, very original and delicious. It seems to me that if you replace sugar with sugar substitutes, it will be very suitable for those who have embarked on the path of building.
If sour cream and cottage cheese are unimportant, then I do not advise cooking.
Taste the cream and dough base, maybe add some sweetness. For my family, everything is harmonious, but here it also depends on the acidity of apples and sour cream.
And one more piece of advice if you decide to bake. Try to make the bottom curd layer as thin as possible, and the filling more.
