Ham with vegetables (optional)

Ingredients

Ham and marinade to it:
Coarse sea salt 0.5 tsp without slide
A mixture of freshly ground peppers and spices (allspice, black, nutmeg, bay leaf, coriander, cumin, rosemary, thyme, etc.) 0.5 tsp
Baking soda 0.5 tsp
Balsamic vinegar 1 tsp
Adjika or lecho, or tomato sauce 1 tbsp. l.
Back shank cut about 600 gr.
Olive or any vegetable oil 1 tbsp. l.
Garlic 1-3 cloves
For the vegetable pillow:
Raw potatoes (preferably young) medium-sized 8-10 pcs.
Medium carrots 1 PC.
Bulb onions (leek or shallots) 1 PC.
Favorite others (zucchini, eggplant, etc.) arbitrarily
Salt, dry herbs, herbs

Cooking method

  • This is more likely not a recipe, but another cooking option.
  • In the sale of pork chops, we often see a part of the ham - the shank. But not all, but its upper cut.
  • Ham with vegetables (optional)
  • It is more profitable to buy it from us than the shank itself. Since there is less bone and lived. Although, of course, everything is delicious to cook. Such pieces of ham are always shown in cartoons.
  • I offer a cooking option.
  • Rinse and dry a piece. Place in a baking bag. Add all the pickling ingredient on top. As a sauce I used chutney according to Angela's prescription. Tie the bag well and shake it in your hands so that the ingredients go through the meat. Put in the refrigerator for several hours.
  • Ham with vegetables (optional)
  • Then place the bag of meat in the multicooker-pressure cooker on the steamer tray. Steam cooking mode, maximum pressure. Cooking time 1 hour. Do not relieve pressure. Let everything happen by itself.
  • Chop vegetables on a greased pallet with vegetable oil or fat. In addition to potatoes, onions and carrots (I have frozen), add all the vegetables in the refrigerator. Except the tomato. It is better to add it when the potatoes are ready, since raw potatoes and tomatoes are not friends. The potatoes will remain firm. It is very tasty to add fennel. Expensive but tasty. Sprinkle vegetables with salt and herbs, pour a little vegetable oil.

  • Put our meat from the bag on top of the vegetables and pour out all the juice collected in the bag.

  • Cover with foil and put in an oven preheated to 220 degrees for 20 minutes. Then remove the foil and bake it under the grill for another 5 minutes until beautiful.
  • It turns out very quickly and smoothly. It's delicious for sure!

Note

The benefit of pork shank lies in the presence of gelling substances, which are important for bone, ligamentous and cartilage tissue. The jellied meat prepared on the basis of the shank contains a large amount of collagen, which increases the elasticity of the joints. In large quantities, the shank contains glycine and B vitamins. The product contains arachidic acid, which has a positive effect on metabolism and on the functioning of the nervous system.
