Flavored ketchup

Ingredients

Red tomatoes 4 kg
salt 3 tsp
sugar 2 tbsp. l.
dry mustard 3 tsp
ground red pepper 1 tsp
hot pepper (pod) 1 PC.
carnation 4 things.
ground cinnamon 1 tsp
vinegar (optional) 1 tbsp. l.
garlic (optional) 1-2 cloves

Cooking method

  • As promised, I am sharing a recipe for one of my ketchups.
  • Let's start with the tomato. There are several processing options.
  • 1. Wash, cut and boil for 30 minutes on low heat, then rub through a sieve.
  • 2. Scroll through a meat grinder (with or without skin)
  • 3. We pass it through a juicer, which I most often do, because there are no seeds-skins, and there is little waste.
  • After we have received the tomato mass, we set it to cook over medium heat for an hour to two, depending on how liquid our mass was initially and what we want to get in the end (I boil it very thickly, it becomes 2 times less than the initial volume)
  • After an hour or two, add salt, sugar, mustard, hot pepper, minced or chopped in any other way, crushed clove inflorescences, red ground pepper, cinnamon, chopped garlic and a spoonful of vinegar to the tomato mass, bring to a boil and pour into sterilized bottles (banks). We wrap it up until it cools.
  • Bon Appetit!

I try to keep the labels from the bottles - the child loves "ketchup only from the store", and still does not distinguish when he is eating.

I boil the tomato mass until very thick, you can boil it for an hour and roll it up, then adjust the salt-sugar to your liking, and for density, you can add 1 tbsp. l. starch diluted in water.
