Ingredients

active wheat sourdough 100% moisture 150 grams
white ripe plum without pits 50 grams
water 150 grams
wheat flour / grain 50 grams
wheat flour 1 grade 50 grams
wheat flour / grade 270 gram
honey 1 tsp
fresh yeast 3 grams
salt 9 grams

Cooking method

  • Feed the sourdough 6-8 hours before the start of the batch.
  • Put plums in a blender glass and pour all the water.
  • Turn on the blender and make a "chatter".
  • Add yeast and honey. Stir until they are completely dissolved.
  • Pour the liquid into the starter, stir.
  • Add flour. Start mixing.
  • Knead with a hook for 12-15 minutes.
  • Wheat bread with plum The dough is soft, slightly sticky. Round and ferment. Fermentation for 90 minutes. Stretch-fold once after 45 minutes.

  • Get the dough out. Squeeze out bubbles. Round off.

  • Proofing in a basket, split down.
  • Proofing 60 minutes.

  • Then remove the cap, lower the temperature to 180 degrees and bake until tender.
  • I have a total baking time of 30 minutes.
