Marinated zucchini

Ingredients

Zucchini 18-20 cm 2 pcs.
Bulb onions ¼ bulbs
Vegetable oil 1/3 Art.
Marinade:
Boiled water 0,5 l
Sugar (or honey) 1-2 tbsp. l.
Salt 1 tbsp. l. with a slide
Vinegar essence 2 tsp

Cooking method

  • Stir all the components of the marinade well until the salt and sugar are completely dissolved, by the way, I prefer honey.
  • Cut the young zucchini into long thin petals, add the onion, cut into half rings (also thinly).
  • I don't recommend putting onions anymore, so as not to roughen the taste.
  • Put everything in a bowl, pour over with vegetable oil and mix well, but gently.
  • Marinated zucchini
  • We put the zucchini in jars and fill with marinade. (I usually get 3 cans of 0.5 liters).
  • We close the cans and put them in the refrigerator. You can eat in a day.

Note

Best before is a couple of weeks if refrigerated.
With this arrangement of the components, the taste of zucchini turns out to be delicately sweet, which is just valuable for me, since additional flavoring notes (bitter, sour, pungent, salty, green) can be added immediately before use.
Marinated zucchini
In the old days, I used a vegetable peeler to cut zucchini lengthwise into thin strips. It looks impressive and does not create any inconvenience if you personally apply it directly from a can to a plate. And if served in a salad bowl, from which everyone will take himself, then this is a full kaput for the tablecloth! I have tried rolling ribbons to serve, but this is a complete kaput for time and patience. This year I just cut it thinly with a knife into half-rolls. Now I will always do that.
