Quick pickled eggplants in spicy tomato sauce

Ingredients

Eggplant young 2 pcs.
Tomatoes 2 pcs.
Lemon juice 1 tbsp. l.
Smoked paprika. ground 1 tsp
Garlic 2 teeth
Adjika 1 tsp
Honey 1 tsp
Parsley, cilantro, dill, basil, z. chopped onion 3 tbsp. l.
Walnut oil 1 tbsp. l.
Grape vinegar 2 tsp
Salt taste

Cooking method

  • Cut the eggplants into thin, ~ 3 mm thick rings. All the components of the sauce, after peeling the tomatoes from the skin, grind in a blender and, pouring the eggplants and mixing thoroughly, place the dish in the refrigerator for three hours.
